* Most Japanese restaurants use lots of MSG, SUGAR and OIL in their cooking!
* These restaurants also don’t use quality traditional ingredients, which means the food loses taste AND nutrition!
But don’t worry! This class is MSG and SUGAR-free and we will use quality traditional ingredients to make our food yummy and healthy!

Master healthy and easy Japanese cooking, gaining more advanced knowledge and skills in practical and healthy Japanese cooking in this INTENSIVE hands-on and fun workshop. This workshop combines JAPANESE BASIC 1, JAPANESE BASIC 2 and JAPANESE ADVANCED COOKING CLASS for a 2-DAY INTENSIVE WORKSHOP.

Follow detailed demonstrations by celebrated chef Yoshiko Takeuchi, who has had over twenty years experience and has frequented some of Sydney's top kitchens, authored two cook books and worked on shows like The Biggest Loser.



WHAT’S IN THE CLASS!

DAY 1 (Saturday 10am - 3:30pm):

* Learn the fundamentals of Japanese home-cooking, including knife skills and cooking techniques!
* Gain knowledge of how to buy real Japanese ingredients, how to balance your meals and the secrets of Japanese health and weight loss!
* Start with making authentic rice and dashi (stock)
* Learn how to make yummy sugar-free teriyaki and the perfect crispy tempura!
* Create a traditional Japanese salad - goma ae!
* Make miso soup using authentic miso - there’s no MSG!
* Learn popular Japanese dishes in healthier and healthier way unlike sugar and oil loaded meals that are served many Japanese restaurants.
* Gain knowledge of how to buy real Japanese ingredients, how to balance your meals and the secrets of Japanese health and weight loss!
* Learn about Japanese superfoods - always a great addition to any meal!



MENU

* Steamed rice
* Home made dashi
*Goma ae (traditional Japanese salad with sesame dressing)
*Terriyaki tofu
*Vegetable tempura with tempura dipping sauce
*Organic matcha green tea
*Seasonal fruits with amazake
* Miso eggplant using oven rather than deep-frying - easier and healthier and still taste amazing with sugar-free dengaku miso
* Agedashi tofu ( deep-fried tofu) with a safe and easy way which even most Japanese don't know!
* Japanese raddish and edamame salad that is perfect companion with deep-fried food
* Inari sushi - pocket sushi, which are normally loaded with refined sugar and extremely high in calories. We make much healthier way and taste amazing! We also add quinoa in sushi rice

DAY 2 (Sunday 1pm - 3:30pm):

* Home made tofu
* Edamame & corn kakiage with green sea salt
* Kakiage soba
* Summer sunomono
* Green tea soy custard

For only $375, you get a 7.5 hour hands-on workshop, you will learn the fundamentals of Japanese home-cooking including essential Japanese seasonings, cooking techniques a variety of yummy Japanese recipes, as well as more advanced Japanese recipes and techniques! We only use top quality Japanese ingredients under traditional production methods to make sure the food has the best taste as well as health benefits.

What to bring
Please bring an apron and wear closed shoes. For those without one, aprons are available to rent for $5. Everything else will be provided.
