48H Pizza & Gnocchi Bar opened their first restaurant in South Yarra in 2015 and quickly became a local favourite. Owners Fabio Biscaldi and Michele Circhirillo have been serving seasonal and artisanal small plates, handmade gnocchi and pizzas inspired by dishes that they grew up with.

For us, 48 hours is the minimum time required for the dough to rise. A dough that has been leavened for 48H with natural yeast will make your pizza light, fragrant and aromatic… just like in Italy. Natural yeast has been used for generations in Italy. In fact, back in the day, only one person in the village would have natural yeast and they would use it to barter goods with. Bread was made once a week, and in some villages, just once a month, so natural yeast had to be bartered or families would go without their bread…. a sacrilegious thought to any food-respecting Italian!

At 48H, we want to respect and maintain these traditions and introduce you to true Italian flavours, remastered for today’s refined palates.

This class is great of beginners, we knew nothing about pizza dough! Best part was eating the pizza at the end. I thought the class was great and the two instructors were informative and entertaining. What I felt was missing was a recipe to replicate at home. We were given dough, yeast, salt and olive oil but what happens when we want to do it all over again? Most classes I have been to give you take home recipes so you can repeat it. A bit disappointed to what was a fun and interactive class. I hope they start providing the recipe based on my feedback as dough is not a guessing game. Otherwise thanks for a fun Saturday.

Our teacher was knowledgeable, fun and engaging and I learnt so much about making the perfect pizza. The dough making part of the lesson was easy to follow. The stretching of the pizza dough and making the pizza with authentic toppings was fun and the teachers helped us improve our technique. The pizza was perfection So fluffy! So delicious! To top it off, we received a coffee (or tea) and wine (or non alcoholic options provided) throughout the lesson, and a goody bag with all the ingredients and recipe to make the perfect pizza at home. Such a great Instructor, Luca was a Pizza genius and new all the tips, tricks and knowledge to wow us and make for an exciting class.
Yes all materials were provided and we enjoyed kneading and closing the dough. We then got to make our own Pizza, I am vegan and the cheese that was provided for my pizza was a tad too salty, it tasted like feta. It was ok though, as the nature of the class & laughs made up for it!

We attended the class as a work team event. The venue was all set up when we arrived. We had 25 people and it was very cramped. I would suggest maximum 16-20 people for the class.

We made the gnocchi, which took about 20-30min, and then we were invited to sit and have lunch (gnocchi, but not what we made). We were expecting to eat what we had made. We also thought the class would go for 2 hours, however it was 20-30min of cooking and then eating and drinking for the rest of the time.

One round of drinks and coffees were included in the price, as well as a goody bag with all the ingredients and recipe to make the gnocchi at home.

If you aren't that interested in cooking and want an easy, fun activity with your team, this is great to do. And it is great value!

All the staff were professional and very friendly. The environment was warm and inviting.
as soon as we walked in, we were offered coffee to warm up and over this we met other class participants, which was a great way to feel welcome and comfortable.
We learned to make gnocchi and it was my first time, so the finer points are crucial. Reading a recipe and trying to make it would be impossible without guidance from someone with a lifetime of experience.
Lunch of Gnocchi with ed wine was a fabulous finish to the fun time.

What a great experience we had!
On arrival, we were greeted with a coffee of our choice and could make acquaintance with the other participants while waiting until everyone had arrived.
Altogether, 19 people participated to this class but it didn't feel over crowded because the venue was very spacious and because two pizzaioli were circulating among us at all time. Those were extremely knowledgeable and very patient when explaining every steps of the making of a pizza to us, answering any question we had.
Everything, from the salt to the topping was provided to us, making the preparation of our own dough very swift and easy. Once our dough was nicely bedded in a provided container for us to take home, another batch of ready-to-go dough was waiting for us. We were then taught how to shape it in a nice pizza base and were provided with a simple but yummy topping for the finishing. In turn, we then baked our own pizza in a stone oven and were able to enjoy it with a glass of red/white wine.
I thought the experience was very good value for money. The ingredients provided at the end for us to recreate our own pizza at home, the coffee, the wine, the pizza we ate on site, everything is of high quality. I also really appreciated that everyone involved in the teaching was very dedicated and experienced. In a world were everything has to be fast and quick and cheap, it made one feel like very special. Like being able to share for a couple of hours the knowledge of incredible craftsmen.

The class was good, without being 'great'. I found that the language barrier with one of the guys was a bit difficult and when a question was asked, the instructor tended to take over rather than explain (which I put down to language). That did not really give the learning experience that we were after. Having 20 people in a small space was a bit squeezy.

What better way to learn how to make pizza than from Italian pizza masters?! The restaurant is small with a rustic feel, which adds to the atmosphere.
For the class, you are provided with everything you need to make the dough, then shown how to stretch the pizza and finally, eat and enjoy with a lovely glass of red.
Giovanni and all the staff were excellent and informative with plenty of extra hints and tips. They are also happy to have a chat about anything!

What a wonderful experience this was! Purchased as a xmas gift. Easy to get to and what a great team. Our teacher (chef) was very well informed and made following along straightforward and enjoyable! What to expect:
2 hours of your day. 20 minutes waiting for coffee. 20 minutes drinking coffee. 10 minutes squashing a single, pre boiled potato. 5 minutes rolling and cutting dough. 5 minutes putting into plastic container to take home and cook yourself. 30 minutes waiting for half bowl of pre made gnocchi. 2 minutes listening to an upsell for the sauce. 18 minutes to finish your 1 glass of wine or soft drink. Not a bad time. Not a good time either. Sorry but not worth the money.

Loved the class! It suits all levels of pizza making knowledge, whether you've never tried or you've been making pizza for a while. The two chefs answered everyone's questions, and were a lot of fun to learn from. Everyone gets to practice stretching out the dough, shaping it and putting it in the oven to cook it (and then of course you eat it and it's delicious). You also get a little take home pack and recipe card. You can't however cook pizza like they do in a regular home oven (it's not hot enough), so they give you tips on how to get the best result from a regular oven. However, I highly recommend getting an Ooni or a Gozney outdoor portable pizza oven to get the closest possible result (photo attached of my pizza using the dough I made in the class and cooked 48 hours later in our Ooni Karu woodfired oven).

Our classes are restricted to 20 people to ensure there is enough space and time for the chefs to answer questions and demonstrate individually. The experience was lots of fun and the gnocchi + wine lunch was lovely! I do feel that they were underprepared when it came to allergies though. I don’t feel it makes sense to cook gluten free gnocchi for everyone, but not have all the flour you are using be gluten free in the masterclass. Considering the level of cross-contamination, I cannot eat the gnocchi I made. I don’t feel that this was made very clear in the booking process.

We had such a great time. We started with a nice coffee, then we had the class and at the end, we had pizza and wine. The class was super fun, everything is well planned, and actually, you learn a lot, for instance, it was the first time I could stretch properly the dough for a pizza. Also, they take you into the kitchen to cook your pizza hehehe, but you don't eat it there, the lunch is a pizza made by them (it was super delicious). It worthed every dollar we paid, the whole group was very happy!

It was good to make gnocchi but the host wasn’t very detailed - e.g he just said “add the flour but don’t add it all” and “roll into sausages” where more detail may have been more helpful (e.g. ‘add 3/4 flour and it should feel like XYZ’ or ‘roll into sausages about 2cm wide’ etc)

I really enjoyed making (and eating) today’s gnocchi class. It was so much easier than I thought, and our chef was very thorough with explaining techniques. So happy to answer all our questions and watching step by step was great. Will definitely be buying the right ingredients to do this again and get the ‘feel’ for the dough.

Enjoyed the class which was practical and the presenter gave great tips and was very approachable too! The class was very good! Easy to book, ingredients hand delivered ahead of time and the instructor was excellent.

It would be good to receive more notes on the recipe (recommended ingredients etc) - I know this is discussed but I'm more likely to keep the email recipe than my handwritten notes.

In the end, our gnocchi was delicious! Restaurant quality :)

Would definitely be interested in another master-class.

This was my second 48H class and it was real insight into making professional gnocchi. I really wanted to know the secret to true super fluffy gnocchi and after following Michele's careful advice my first batch were perfecto. I paired the badboys with a burnt butter sage sauce and was in heaven!

Love this class. I did it for the second time today and I'm tempted to do it a third time. The chef and moderator are friendly and answer all questions as needed.
