BBQ School was founded in 2004 by internationally trained chef and passionate foodie Ben Farley who identified that while many Aussies were really into cooking on the BBQ, most only had one or two recipes they knew how to cook really well.

Showing keen BBQ’ers how to prepare and confidently cook a collection of simple, effective and tasty recipes was the best way forward and so in 2004 Ben turned his back on a career in Sydney and London high profile restaurants and founded BBQ School.

In our classes, we assume no knowledge but have found that the more a student knows about BBQ cooking, the more they learn from our experienced chef presenters.

To date around 90, 000 people have been taught through the BBQ School.

Our head office is in Willoughby, Sydney but we also operate regular classes in Sydney's Centennial Park, Melbourne, Brisbane and the Hunter Valley and each year the School continues to grow in response to people who wish to cook with more flair when entertaining.

Turned up to the Indro Hotel with a little bit of nervousness as the place does look like a crack den that should have been torn down 20yrs ago!
Was greeted by the Cooking School crew and grabbed a beer on entry.
Class was very good our Chefs/Teachers were excellent, very knowledgeable and approachable, I would encourage people to ask heaps of questions, I thought I knew a fair bit about cooking but learnt so much from the day.
Food was good but unfortunately we were 3 of the last ones to eat and all of the salad and sweet potato and most of the chicken was gone, we had about 17 people so I am not sure if they skimped on the food or if people had too much each (pretty poor that our fellow classmates didn’t leave enough for others but perhaps over cater on salad and veges?)
Only had 2 beers provided which I thought was a bit on the short side, but we made up for it by grabbing some extras that we had to pay for.
Other down side of the location is constant road and rail noise that makes it a bit hard to hear.

Might sound like a negative post but I would definitely do another class as we had a good time, if the other stuff had of worked out it could have been amazing!

I got the class as a birthday present and went with a mate. Even though I've been into BBQ and smoking for a few years, I still learnt a new skills. The teacher had a lot of experience in big commercial events and catering; he knew his stuff.

The venue was basic, but you don't need much for BBQ.

The food cooked was delicious and the beers they had were also really good. A couple of crafty ones including Fixation Pale Ale and Voodoo Ranger IPA.

Would happily do another one of their classes.

Thought the class size was too big to be actually hands on and able to do more and learn more.
It was interesting but didn’t learn a great deal.
Also, being charged $8 a beer, and you can’t bring your own, and the choice was dreadful, was a real turn off and felt like a rip.
I’d struggle to recommend this course.

Hi John, Thanks for taking the time to write your feedback.

We have differing levels of experience and understanding with customers who attend low and slow classes. Yet everyone learns so much when following the class, Chef and demonstrations. As you could appreciate - there is obviously only an amount of hands on at a "low and slow" class where foods are put on hours and hours before the session. (Otherwise they wouldn't be cooked or be a 12 hour class) We demo each item to ensure understanding is provided based on what we are doing. This is advertised in the class material too.

In terms of beverages, we on purpose provide premium craft beers and beverages for the discerning palate so that customers can experience new and exciting flavour profiles. The feedback about these is off the chart positive. We do not serve mainstream beverages as they can be purchased everywhere. Our beer prices are cheaper than a pub or hotel and the feedback from customers is that they are very reasonable.

We certainly don't price gouge and are incredibly reasonable compared to other cooking schools. Have you checked any others out? We offer great options where a customer wants to purchase something at the class. We are a small business and offer the opportunity to purchase something additional if they choose to.

In terms of "flogging" other items - we have a highly useful set of products that we use in the classes that people find they might need.

From your class we received unbelievably positive feedback on the day via the feedback forms, we sold 7 tickets to customers wanting to rebook, we received comments on the great range of beer and we sold a lot of stock to customers from our range who found them useful to use at home.
As the director of the business I was really proud of the class outcomes and repeat bookings.

Equally, I am sorry to hear of your take on the experience too and certainly take your feedback onboard.

An engaging presentation by Simeone at the NEW Que Club cooking school. The much larger venue is tucked away from the hustle and bustle in a peaceful Brunswick street. I was greeted by friendly staff. The salads and side dishes were packed with a variety of vegetables, fruit and condiments such as banana, fennel, lime, honey mustard, coconut…. These combined with the salmon, king prawns, squid and trout provided a tasty sit down meal full of flavours. A Sunday well spent.

We had a fabulous morning cooking amazing food and the chefs were very entertaining (Ted and Greg with the assistance of Kristine). We had such a great time, I have now purchased another gift voucher for self to return and do American smoking. The venue was good and central albeit a little basic.
An apron was provided that you keep but it was plastic and little basic. A nice cloth material one would be great so you feel more incline to keeping it.
The class was more of a demonstration rather than a doing class.
We did learn some good tips about smoking times and wrapping the meat.

I attended the BBQ and Smoking meat class with mates and we all had a great time. The instructors were knowledgeable and offered lots of useful tips. The venue was good but cold as we’re in Canberra, perhaps move it to the sunny side the area next time. Would definitely recommend and we can’t wait to try and replicate the menu in the warmer months :).

Class was held at the Que Club which also has a nice restaurant. Our instructor was very resourceful. We were shown techniques for cutting, preparing and cooking a mouthwatering brisket. We cooked several different meat dishes but the brisket was definitely my favorite meat dish, it was cooked to perfection. Salad and dessert were also served. Meat lovers will love all that is offered at the Que Club venue.

First of all Class Bento didn’t provide the address of the place where the class was happening. It only said Fishwick. I googled BBQ School for the address which was incorrect and lucky there were people there that told me the right address and eventually I got to the right place but 30 minutes late. The class itself was good as we were a small group we had a chance of participating on some preparation for the meals. The chef had a great knowledge and the BBQ School team were very nice. Overall it was a good experience despite the weather as the class was outside a local coffee shop.

We had Pam the owner and Luci the chef teaching the class today. We went through the different types of bbqs and the fuel they use. There was some hands on preparing and cooking. We made scallops with crunchy salad, scotch fillet with greens, jerk chicken in a drum smoker and lastly the chocolate pudding with berry coulis all paired with craft beers and a beer/drink to begin with. We enjoyed the class sure but we thought the food was a little bit lacking quantity wise.

Although I enjoyed the class the weather was not in our favour (no criticism of the organisers) It was very hot which detracted a little from the overall event. The teachers were fantastic and worked very well together to keep things moving and interesting. I certainly picked up a number of tips that I will be employing in my cooking. The food that I ate was very good and satisfying. I would recommend doing the class with a friend/s as it makes the experience more enjoyable.

Que Club venue, facilities and the staff were exceptional as always. In the past, ai have booked 2 classes directly with Que Club. The recipe cards that they offer when you attend the class are exceptional. Having them while the teaching lesson is immensely valuable as you can refer to them, ask questions and make notes. Not having them upfront made this lesson less valuable. I will book lessons directly with The Que Club in the future

The teacher and all the staff involved were lovely and friendly. The teacher was informative, personable and tried to include the group in the activity. The venue was great although it was a hot Brisbane day so an industrial fan or two for future Summer classes certainly wouldn't go astray. It was a fun experience but I think the value for money proposition could be improved a little (pints not pots, people!) and maybe involve the group a bit more hands-on in the actual smoking process (obviously time dictates that a lot of the preparation needs to be done in advance). Nevertheless, the reverse sear Cape Grim rump was amazing and tender, as were the smoked beef short ribs. We had a great time. Thank you.

Today we had Pam the owner and Luci running the class. Both very accommodating and knowledgeable on BBQing. We had a prawn on sambal in a lettuce leaf, calamari on fennel, grapefruit, mesclun salad, baby snapper with a fresh crunchy salad and a whole smoked side of brined salmon, some potato salad and French fries as well. I gotta say as much as they were lovely, the food was a little on the stingy side. We almost ran out of prawns, and it was one prawn per person. The calamari we barely had two pieces each, and it’s not a super expensive piece of seafood, they could’ve just given us a bit more. It was like they knew it wasn’t enough so when it came time to sit in the restaurant and share the snapper and salmon, they gave us potato salad and French fries to fill us up.

Lots to learn from pellet grills to kamado grills to offset smokers to drum smokers to using briquettes fuel. Luci is an expert on all things bbq. We made jalapeño poppers, pulled pork sliders, baby back ribs, gigantic brisket and brownies. There were a group of 5 who didn’t turn up so we had plenty of food to go around and the space felt roomier than yesterday. The information sunk in a lot more as I was more comfortable.

The teacher Luci was very knowledgeable on bbq especially coming from a chef background but the venue was a bit of a squish. The small space could barely fit all of us in and when the bbq was on, it felt like I was being smoked. Irritates the eyes. It was a 38 degree day also which added to the discomfort. Very relieved when they sat us inside the restaurant for lunch. As great as the bbq rump, short ribs, chicken thighs with salsa, avocado and tortillas were, there was barely enough to feed everyone. You get a couple of free beers but I’m not a fan of beer.

This class was ok. Not really hands on, mostly just observing the prep. Somewhat informative but didn’t leave feeling ready to start smoking. Teacher nice & funny at times. Food snacks were good. Main meal was a little disappointing, not super tasty at all.

The two teachers were excellent, had a great style and willing to share their knowledge and gave some great tips and advice.
However, there were many detracting elements-
The venue was hard to find and very basic in nature.
The drink options were limited. Apparently the class the day before had cleaned them out- ah, shops were still open to restock
We were told we would prepare the sides- we were given one option and there was three of us doing two elements. Yes, you have provided the recipes but they were pretty easy options
Outside of your control, but a magpie flew into the dining area and pooped on a tablecloth. We told the young fella (Dan?) and, inside of your control, he just shrugged- AND LEFT IT THERE for the people who then had to sit at that table to eat.

Overall, we were less impressed than we wanted to be.

We do understand where you are coming from and we have definitely taken your feedback onboard we will definitely work on making our customer's experience much better. We have discussed the matter regarding the bird with our team to understand the situation better, the team on the day informed us that our staff member went to get cleaning items for the table when you informed them regarding the bird. However, by the time they came out, the table was already cleaned by either another staff member or/ customer.

We do hope that regardless of the ups and downs of the class, you still enjoyed your class and had a good time.

My experience with the Christmas BBQ cooking class was great! The instructors made it very easy to comprehend. I feel like I could make the recipes at home and I feel more confident cooking seafood. I did think it would be a little bit more hands on with the BBQ but I was happy to watch. A pleasant surprise was being able to sit afterwards, with good company, eat the food we made with a complimentary drink.

Only complaint is I was a little chilly, my fault I didn't check the weather. But I was able to warm up from the heat of the BBQ.

The class itself was fun, inclusive and we got a lot out of it! You do have to come with a somewhat basic understanding of Charcoal bbq’ing and smoking but the teachers were more than happy to talk through anything you didn’t understand

It was a joy to eat at the different bbq’ed meats at the end and loved getting the digital cook book too

The course was good and the food very tasty.

The description of this course says you'll learn the difference between different parts of America and their style of BBQ, this course didn't cover that just stated Texan was best but still didn't really tell us what the Texas style actually was.

There wasn't any hands on experience with the meat, only with the preparation of the side dishes.

I don't feel like i learnt anything about fire itself, a little explanation when describing the different type of smokers but I was just hoping for a bit more theory and explanation.

We all commented that we've watched many BBQ tv shows that really emphasise the importance of mop sauces but nothing we cooked had a mop / spritz it was all just "low and slow", half cook open / half cook wrapped then pour a sauce on at the end.

Thank you for your feedback, we appreciate you attending our class and it is quite unfortunate that the experience was not what you expected it to be like.

Our classes are beginner- friendly and it goes on for 3 hours, in those 3 hours, we aim to provide an enjoyable, interactive yet informative experience for our customers. Most of the content that we cover in our classes is based on basic knowledge that we can provide to customers who have little to zero idea about American Smoking BBQ. Taking into consideration the time limit we have, it is a little tough for the team to go in theory about the basics of American Smoking BBQ but we try our hardest to provide that to the customer. In future, we will take your feedback into consideration and see how we can brush up our lessons in that way. I do appreciate that you loved the food, so thank you for that.

Feel like I paid for a very below average BBQ meal, that's it. I have been to Black Bear and Bottom of the Barrel in Sydney also Kentucky and Tennessee in the USA, I would give the brisket a 2 out of 10 and the ribs a 3, BBQ mop sauce was gross. There was no talk or demonstration of different regions in the USA. Meat prep was pathetic, the "chefs" couldn't answer a few questions and we all could see it was a waste of time to ask them, they are line chefs no specialty in BBQ at all (yes I have owned restaurants). This course was dodgy to say the least, I have been smoking meats for 16 years and I learnt nothing from the class and I can already cook better than the rubbish we were served up today. Really the "big secret technique" is to wrap in baking paper and then foil, what a waste of $150. I found not a single piece of advice was useful and the annoying persistence of the chefs to help them with the menial tasks like fanning a strawberry or cutting up and de-seeding a jalapeno rather than this is how you make up a rub or marinate or baste or prep a brisket or even what kind of cuts and trim of the cuts to buy. Just a joke. We just stuffed around for 2 hours then were sat at a table for the last hour twiddling our thumbs after eating. Such a waste of time and money.

I was under the impression when booking this class for my husband and providing his allergy requirements that he would still be able to eat most of the food they prepare and cook. Unfortunately being allergic to dairy and majority of the meats beside the steak were all cooked in butter… and potatoes were smothered in sour cream.
Wouldn’t recommend if you have an allergy, other than that my dad who was able to enjoy the food was impressed.

The Seafood BBQ cooking class is one of the best we have done and we highly recommend it. Seamus is an excellent teacher - he makes it fun and still provides very helpful tips and tricks. There was not very much hands on experience. Mainly just watching the chef explain the process. Would have liked to be more involved with preparation.

Good personalities and communicators. BUT all of us were beginner smokers and would have benefited from much more technical details about the smoking process. Briquettes vs coal. Do you add coal if the temp drops?. What if it gets too hot? What does smoke do to meat? Can you have too much smoke? Are there easy and difficult cuts? There are different shape and size smokers, what do they do. Then show us the meat prep, then the half way wrap then give us a feed. I enjoyed the day but could have learned a lot more.

3 instructors, 2 of which were qualified chefs. Fully explained everything and made it simple to understand and follow. The course was held at the German Harmonie Club at Narrabundah, ACT, and was quite suitable, with all weather facilities. We got a handout covering everything we did to take home with us. This was certainly good value for money. Now to do some low and slow cooking/smoking at home.

It was supposed to be an enjoyable birthday gift for my husband but didn't live up to the expectations and previous reviews. 25 people in the class and a function next to them so they could hardly hear anything. Plus there wasn't actual lessons to be learnt. Definitely not worth the price I guess. I feel bad for gifting him such a less than ordinary experience.

Shane was obviously very experienced and knowledgable about food and liked to share this knowledge. This meant we went over time to finish the day. This was not a problem for me but it could be for some. The facility was perfect for a BBQ class but the toilets were disgraceful. Obviously no-one had checked them before the class started. I loved being greeted with a beer on arrival.

Not very hands on at all. Equally nothing new to learn. This is a class for someone who does not cook at all and hasn’t even picked up a piece of seafood! Made 1 salad that was really just lettuce leaves, some fennel, grapefruit and balsamic.
But wait for itthe prawn skewers was just some curry paste with yoghurt and coriander. Didn’t even make our own curry paste!
Teacher was disorganised and did not have everything at hand.
Do not recommend and would not do a class of any sort from that venue again.

I thought the hosting by Seamus was fantastic - he was good with people and quite funny. The location and venue were great. The aprons were NAF - not worth keeping - an opportunity missed if it's a good apron, will be worn later and other people see the branding.
I was a little disappointed by the content. The overall plan of what we were to learn was sound, but it was less hands-on than I expected. More of a demonstration and tasting than a lesson.

I went with my 28 year old son and we both found the course interesting, entertaining and inspiring. The teacher, Seamus, was amusing and down to earth and gave us practical and money saving tips, for example, in creating your own smoker. The venue was delightful (in spite of the heavy rain) - a pavilion in Centennial Park with undercover cooking area and a table set inside ready for lunch. It was a very professional operation - all highly organised, very instructive with two assistant chefs to help or hand around beers and excellent equipment. The meal, with three different meats, vegetables (all smoked) and dessert was magnificent and a jolly good time was had by all!
