Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.

In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.

Now back in her old stamping ground of Brunswick, Tracey looks forward to sharing her love of good food through her cooking classes for keen home cooks, professionals, corporates, kids and teens.

Our family of 8 attended Tracey's cooking class last Saturday. With 6 adult children who are all very different, we didn't know what to expect. It was the most wonderful afternoon We had so many laughs as we navigated the three course preparation, cooking and eating delicious Mexican treats. I went to ice cream kids cooking class with my 7y niece as xmas present. Tracey was great with the kids, I was the only adult that had a ticket; other parents just dropped their kids off and poked their heads in, but that wasn’t a big deal at all! Lisa was a great teacher and Brunswick Kitchen is a great venue. It was fun to learn about making Swiss meringue buttercream - and certainly something I will use again. The white chocolate cake was a big hit at home.
I was expecting more information and technique on how to create the new 'Vintage' decorating trend. I would have liked more information about how to choose colours and how to style the peaks and how to make them look vintage.
I think this class was good for beginners but, if you are a bit more experienced this is maybe not the class for you.

Chef Daniel Huxtable provided an entertaining class from start to end. He has a wealth of cooking tips and tales he shares from his experiences cooking in Australia and abroad. He combines a diverse range of ingredients to produce some very creative and colourful vegetable dishes. The flagrants from his Kumara and ginger purée combined with his cauliflower steak, shiitake and macadamia crumble made it my favourite dish. You will definitely enjoy Daniel’s class.

Our organised chef, Almay brought her South African culture and cooking skills together to deliver a delicious winter feast. We started with a sweet hibiscus tea with honey. It was my first time to eat dishes with a South African influence, so I was introduced to some new ingredients and impressed by the unique flavours achieved in each dish. Definitely a class I would recommend.

The teacher and the class were both excellent and I could not recommend it enough I did this class with a small group of people for my birthday and we really enjoyed the interactions as well as the food! We had enough space and loved it for being a good and clean space for a private event and activity. We had enough materials to use for the class and learnt quite a lot in a decent amount of time. Tracey and her team were great hosts and the selection of food that we cooked was amazing. Despite being a bit less hands on due to our large group size, Tracey and the team accommodated us very well and everyone had a wonderful time!

Tracey was lovely and inviting as always and spring vegetables never tasted so good. We had goat cheese ricotta pomegranate with asparagus and broad beans, leek potato and thyme pasties with a real fresh take on tabouleh with avocado and radishes and to finish off a rhubarb creme brûlée. A very hands on class and everyone was involved in the food prep and cooking, especially the part where we used the flame to brûlée the sugar on the dessert. Great fun.

Daniel Wilson hailing from Huxtable and Huxtaburger fame treated us to some of his favourite Asian inspired dishes. From squid, green mango, chilli, herb and peanut salad to soy cured salmon, snow pea, sesame and & soba noodles to pork larb in lettuce cups and coconut chicken salad. Every dish was a hit and was greatly enjoyed by a captivated audience. It was a truly wonderful and tasty experience watching the MasterChef at work. Looking forward to coming back to Brunswick kitchen for more classes.

Tracey showed us how to make mackerel rice paper rolls with a classic Vietnamese dipping sauce, deep fried prawn and sweet potato cakes, whole mackerel wrapped in banana leaf and a squid and pomelo salad. I had a great time. Dat was always ready to pour a glass of water and wine and was also very skilled with segmenting a pomelo. Very tasty meal.

I had a wonderful time learning to make a meringue cake, salted caramel lamingtons and a strawberry and blueberry berry tart with Lisa and Tracey. It’s so lovely watching Lisa’s mastery in the kitchen and making creations that are not only great to look at but also delicious to eat. They shared lots of handy tips for cooking and baking at home. The teacher and host were friendly, informative, and professional.
The venue was well set up and intermate. Felt as though you were invited over to a friend's house for dinner (In this case the friend is a highly skilled chef).
The food was all very delicious, and the knowledge and material I took away from the class were well worth the money. We enjoyed the experience so much that we brought Daniel Wilson's cookbook and he even signed it for us. I highly recommend these cooking classes. We will be back in the near future for another cooking class.

I did the vegan vietnamese cooking class. Tracey was amazing with the demonstration explaining as well as keeping it real, and connecting with people.
All the dishes were fresh delicious and fun and easy to make.
She is very knowledgeable and genuine in the way she teach and engage with her the students. She gave us lots of tips and info on the dishes, she is also a good story teller.
I would highly recommend her class.

Tracey’s expertise on southeast Asian cooking and friendly and kind ways make this class an enjoyable affair. We had a very hands on class making rice paper rolls, prawn and herb salad, beetroot curry with saffron rice and fish amok. Even more delicious having been created through our own hands. Chef Lisa and Tracey are such gracious and kind people. We had a mini cheese platter to nibble on during class accompanied by some wine. We made buttercream frosting for chocolate cupcakes and meringue topping for white choc cupcakes. There was the inimitable made-from-scratch caramel matched with ice cream, mud cake, raspberry & biscuit crumble. Lemon curd, marshmallow, wagon wheels, the list goes on, lots of delicious snacks for the sweet tooth and lots to take home too.

It was a very comfortable class regardless of your cooking skills level. It was very easy to follow and loved tasting the end product. We even got earth friendly take away containers for the extras. Win!

A very well run, interesting and enjoyable cooking class. Tracey the teacher has a wealth of information about Vietnamese cooking and ingredients. Both Tracey and her assistant were friendly and professional. The class was held in a bright, spacious, very clean room overlooking the street. Materials supplied included aprons, utensils and cooking ingredients. Hand sanitizer was available. Cooking instructions were clear and participants helped prepare food which Tracey cooked. We had several delicious vegetarian courses accompanied by a choice of wines. If you are a non-drinker it's best to advise beforehand. I forgot to do this, so was only offered water. The price per person was $110 which included all food, drink and a 2 1/2 hour class with recipes to take home.

The teacher Tracy was really knowledgeable and had a wonderful background from Vietnam. It was an enjoyable class with more complex recipes than I thought I could do but she made it simple and gave us confidence to be able to do it at home. She also gave advice on where to buy different ingredients. And her assistant was wonderful. Thanks again.

The teacher Emma was great and made the class a lot of fun. Tracy was brilliant as the host and organised everything so that things were in front of Emma as she needed them. We made six desserts and tried a couple of them with a glass of wine. The others we took home. The kitchen/classroom was a good size for 7 "students" which kept it friendly and easy to follow what was going on. Great value for money!
