The Ligurian region of Italy stretches from the sea to the mountains and thanks to its particular geographic location, has a cuisine rich in seafood dishes and others that showcase ingredients from the forrest, such as walnuts and hazelnuts. It is also known for growing a very aromatic basil, used for the making of the famous "Pesto" sauce.

The cooking menu includes:

- Learn how to make the Traditional Fugassa Genovese. (Classic Focaccia bread)
- Fritelle di bianchetti (white bait fritters)
- Fazzoletti di pasta fresca al pesto. ( Homemade pasta and authentic Genovese pesto sauce)
- "Pansoti" con salsa di noci (ravioli filled with ricotta and borage, dressed with a rich and
creamy walnut sauce)

For dessert, you will bake a "Perseghe all"amaretto e crema" ( baked peaches filled with amaretti, hazelnut and cream, and a complimentary glass of wine is included.

I have always loved to cook. My mother and grandmother taught me that a kitchen is a magical place where simple ingredients are transformed into mouth-watering delights.

My father gave me a love for all that grows wild and free. As a child, she spent many holidays in the Northern Italian mountains, fishing for trouts and yabbies in the rivers, collecting mushrooms, berries, and chestnuts in the forest, and even collecting snails.

Food was like a beacon around which my family would appear, drawn as if by magic by the fragrance, beauty, and abundance of the offering laid out across the large kitchen table. These seemingly impromptu and delicious meals left a deep impression on me and were the inspiration for La Cucina di Manuela.

My cooking classes are my way of sharing with you the best of that indelible experience.
