4.8 (470)My name is Joseph, and I started Kimberley Chocolates to produce high-quality chocolates in Sydney. I held a BSc in Food Science and wanted to make great chocolate more accessible to our community, including by combining it with flavours like chilli, lemon myrtle, and quandong (Australia's 'native peach'). Kimberley Chocolates won the gold award at the Royal Easter Show Chocolate Competition, and I started to appear in the media more often. People started contacting me to learn more about chocolates, and I realised that there is a great need for chocolate education, and that's where our chocolate workshops started!
But my passions and skills don't just stop at chocolate, I've also spent my fair share of time in perfumeries. I'm qualified in Organic Chemistry and Food Science from the University of NSW and worked for many years with the extraction of oils used for fragrance and food flavouring as well as at Unilever in the laboratory producing and testing perfume. Six years ago, I studied perfumery and with his my newly-refined sense of smell and skills in producing olfactory compositions, I began creating my own perfume. This led to sharing my knowledge and skills with others and so I began running fun, hands-on perfume making classes in Lilyfield.
My teaching style is playful and fun, and very hands-on - the more sampling and laughing that happens, the better!

Really informative, hands on and interactive class. Went as a solo participant and enjoyed learning about some of the history and how different perfumes were created. Joseph was very knowledgeable and students were given free rein to be creative and experiment to create their own signature scents. Highly recommend!

I spent a fun day, learning how to make ganache and most importantly, how to temper chocolate. (I've been struggling with it before.)
For the love of chocolate, I recommend this to everyone with a sweet tooth!

The lesson was a lot more fun than anticipated, and we learnt a lot. Joseph is obviously very knowledgeable and enjoys what he does. Yvonne was so nice also!
We are both vegans and there were absolutely no problems with us taking part in the class (we just had to bring our own coconut cream or other non-dairy cream) - and in fact, another vegan was in the class also!

Joseph was phenomenal! He was the best teacher, with insightful knowledge about chocolate. This class was a birthday present from my girlfriends and I took my partner along; It was enjoyable and educational, and not knowing what to expect, it turned out to be a fantastic experience. Aside from the final result of the chocolate truffles, Joseph was the highlight, so much so that I have already recommended to everyone that they need to book a class with him!

What is not to love, chocolate and fun. Joseph made the experience a lot of fun and put everyone at ease. We all learnt something new and got to take home some delicious chocolates. My daughters and I loved it!

We really enjoyed our perfume, making class! My little sister loved going and getting personal feedback from Joseph and his team who are really friendly. It would’ve been great to be on able to step out for some fresh air amongst all the smells maybe halfway. It also would’ve been great to get a little bit more of a lesson on how to mix sents, rather than just having a sheet of sents we could copy.

Joseph is kind, humorous and has a lot of chocolate knowledge. The workshop is clean and spacious. The interactive environment works well where you can chat, drink hot chocolate and eat chocolate dipped strawberries in between hands on tasks. A fabulous way to enjoy a Saturday morning- oh and you take home a delicious box of truffle chocolates !

I had Make Your Own Fragrance class with Kimberly Chocolates in Lilyfield.
He and two other assistant teachers were so welcoming, helpful and approachable. The location is easy to access, literally one minute away from the closest bus stop. The venue was so clean with lots of space to walk around the table with various fragrance bottles on. For beginners like me who is so passionate about scents, the ingredients provided there were just right number to explore. Otherwise I wouldn’t be able to leave the venue even after the class! The best part was we were given a wonderful opportunity to experiment freely without thinking too much (I did think too much however!). It is all about pursuing olfactory pleasures whether you have formal (even a little) knowledge of perfumery or not at all. Of course some basic guidelines were given, however, what I love most was the fact that all the attendants were welcomed to try whatever fragrance composition we believed would work! Don’t worry Kimberly would give you some help at the end to balance it out. ;-)
In this class I learnt that I need to trust my own sense rather than thinking too much and just give it a shot!
I left the venue with so much fulfilment about the class as well as myself and also two beautiful original fragrances! Definitely good value and you should try his class. I already would like to go back again!

Venue was spacious, clean and easy to access.
The chocolates were delicious, seemed so easy, and hopefully some transferable skills to do at home. Great value for money as we took home a lot of chocolate - if we didn't eat it at the time - and a great bunch of strangers to learn with.

The chocolate making was a fantastic experience. Joseph is so passionate and knowledgeable about chocolate. There were ample flavours available to choose from and he was very generous with the amount of chocolates we made (and ate during the making!). I went with my daughter and had a lot of fun. What we learnt the most was how to make tempered chocolate using a very simplistic method.
Will do it again in a heartbeat.

This class was so much fun. I loved the freedom we had to play with the different oils - I thought it would be quite a controlled process, but instead, they let us experiment with the scents and be creative! We were given some guides as to what oils pair together well, and our teachers also provided one-on-one help and advice in relation to our individual perfumes. Very relaxed vibes - I also adored the location at the house - it was so poetic and elegant. My partner and I are excited to use our own specialty perfumes! We came away with two each. Great experience, highly recommend.

I had a very enjoyable morning making both an oil based and alcohol based perfume.
Joseph presented a short talk on the history of personal fragrances then gave us a sheet detailing some suggested blends grouped under the required top, heart and base notes.
I now have two of my own special perfumes to treasure and a new understanding of the process of blending of fragrances.

The class is great for beginners and it provides you with a lot of freedom to make 2 signature scents just for you. I enjoyed the little history behind perfume and the wide variety of fragrances available and you can tell the teachers are very knowledgeable.
There was a little mix up with class numbers but it shouldn't deter as everyone had ample time to experiment and gain feedback to perfect their scents.

Very knowledgeable teacher and a wide range of scents to work with. It was amazing to smell what other classmates came up with, our perfumes were all so different The venue was beautiful and I loved that we got to try to make more than one perfume, and that if it didn’t work out, they had the skill to suggest the right notes to balance it out. Good value for money and I’m very tempted to go again

Enjoyable experience. Joseph and his assistant were so knowledgeable and warm. Good location, super close to Summer Hill station (around 5 mins walking). There were many choices of fragrance to choose from. The class began with perfume history and introduction of top note, heart note and last note. Joseph gave us a paper of perfume recipes that we could use as examples and tips to make a good perfume then we could go freely to make our own. Joseph and his lovely assistant also gave us suggestions based on what we want our perfume to be like, which was super helpful. Highly recommended!

The make your own perfume class was great.
First up some really interesting information on the history of perfume then an explanation about Base notes, top notes and heart notes.
Then it’s time to create, So many possibilities and if you get a bit too carried away, Joseph is happy to help you get to the scent you’re after.
You leave with two cute 30ml bottles of perfume. Two different scents of your creation.
Everyone was lovely including the other attendees. Was a simply lovely afternoon. I highly recommend it.
I wondered if the scents are all vegan as I have many vegan friends who would love this.

Joseph, our teacher was friendly extremely helpful in guiding this Worksop given fifteen students descending him on simultaneously for help.
Very generous of him to have opened his own house as the workshop couldn't go ahead in the original place planned.
The Worksop had plenty of supplies and essential.oils for all of us.
While you are not going set a light in the world of perfumery, you certainly will make and take home one or two of your creations. To this end you have half dozen set formulations to start off from.
Excellent and certainly valuable introduction to the seductive world of perfume.

Yvonne and Joseph were great teachers.
Joseph is very knowledgeable with the origins of perfume. We learned a lot from his introduction.
I will say it was very overwhelming but Yvonne was floating around helping the students with deciphering which scent they need to add to get the their desired finished product.
Once we were happy with the scent we took it to Joseph. He would give you his opinion, test it on your skin to see if it works well and then sprays it as the final step.
I bought this for me and my sister as her birthday gift.
We had a lot of fun and can't wait to attend another session down the track.
We got to take home 2 lovely bottles of perfume.

Joseph was great, explained things really well and asked if there were questions throughout the class. He and his assistant were approachable and friendly with a chilled attitude. He was very knowledgeable and a great teacher.
The only thing you need is an apron, all the rest of the material was given.
What I learnt:
How to make ganache (for chocolate mould/truffles
How to temper chocolate
I got a box of chocolates by the end, of ganache filled moulded chocolates, chocolate dipped chocolates, chocolate truffles, strawberries dipped in chocolate and a Turkish delight dipped in chocolate.
I feel confident now in trying to make my own chocolates.
Most people came with a friend/family member. I was on my own and it was fine.

Absolutely loved this course and Joseph was so passionate and knowledgeable. He knew exactly what was missing in our scents to make them better, including what combination of scents worked together and what ones didn't. It was also really great to have a small class size of ~10 which meant we got lots of one-on-one help. I would highly recommend this course!

It was a very slow start. Full hour went by without people having even done anything but watch. Picked up after that but theres no reason people cant make ganache at the same time. Good from then onwards, but finished 40mins early and felt like everything was being dragged out to kill time. However it was 39degrees so maybe the heat impacted the session? Joseph was lovely when he got going.
Made ganache, only 1 person tempers chocolate contrary to the description, RH en made 5 large truffles, smaller hand dipped truffles and chocolates from the 1 mix.

We loved the intro with the history of perfume. Joseph was such a delight and really passionate about what he does! Would have loved to know more about Joseph’s background with perfume! The venue for the workshop was well set up, generous work areas, nice and cool on such a warm day and easy to see Joseph when he was giving individual instructions.
I am impressed that hair nets were required and there were good facilities for washing very sticky gloves.
Joseph is an excellent instructor, very generous in sharing his knowledge and particular is assessing our understanding, if he felt there was some doubt he would summarise the information again and we were always free to ask questions.
The quality of ingredients were top shelf and I am sure contributed to such a good end result, I think our chocolates were pretty good! Comparing notes with family who had done a similar class elsewhere we discovered how generous our supplies were and they were very impressed with the quality and quantity of our end product.
I came away with a better understanding of the components of various chocolates, how to handle the product with care to achieve a good result and nowI am confident that I can temper chocolate In the past I have shied away from doing anything too fancy with chocolate but that has now changed. I recommend the orange and brandy filling, yum. Full marks to Joseph and his ever helpful and encouraging assistant Connie.

Exceeded Expectations!
Such a great class. My partner and I had a really fun time and felt like we learned so much. The instructor(got experience of more than 17 years as a Chocolatier) was so knowledgeable and friendly. At the end of the class we were able to bring home the chocolates we made. Both my partner and I were suprised at how professional looking they were. They use all high quality ingredients and you can tell with the end results. I loved the notes they email us at the end of class to help us recreate these chocolates in the future. Would love to do another class and would highly recommend.

Joseph was an excellent teacher. He not only gave you instructions on how to make chocolate but also the science behind it. It was hands on and kept us busy the whole time. Connie was also very helpful. I feel confident enough to go home and make my own chocolates and try different flavors. The area was also super clean thanks to Connie. This course was amazing! The teacher was very personable and knowledgeable and supportive. We were very busy the whole time, they had planned it well so that we didn’t have any spare time. They were also very generous with their chocolate and hospitality, we got coffee, hot chocolate, strawberries, Turkish delight, and chocolate to eat as we went. The kitchen area was great for the 10 people in our course and was kept super clean by the lovely Connie. Thanks guys for a very enjoyable afternoon.

I attended the make your own perfume class and it was terrific.
Joseph who ran the class was great and definitely had a well trained nose, he helped me perfect both perfumes that I mixed and made sure I was happy with them.
All the ingredients they had to mix with were very nice and you could tell they were of a very high quality.
I was the only male in the class but never felt out of place, I urge more men to come and have a go at making yourself a personal scent.
I actually wouldn't mind doing it again, in fact once my bottle runs out I may very well be back to try and duplicate my original flavour.

After a brief history and theory introduction it was straight in to making our own perfumes. The instructor provided good feedback on how to balance our perfumes, but otherwise let us experiment with the range of bases, perfumes and oils provided.

Joseph was a very passionate teacher who had a lot of knowledge on perfumes. This activity was super enjoyable and very different I would definitely recommend this class for people who are wanting something a bit unique. You get to go home with two perfumes of your own creation. It was so cool to see how different everyone's creations was. I cant wait to wear my new perfumes out.

The studio was absolutely wonderful - it was great to get an insight into how perfume is made and dabble around and create something for ourselves - our own signature scent!
Joseph was fantastic - very helpful - passionate - clear - and listened intensively! With all the fails in the class he was able to sit down individually and solve the problems. Would definitely do again and recommend to others!

Had actually booked this class in as party of a hens party/event and its with my pleasure to say all the girls had thoroughly enjoyed themselves! Joseph's class was incredible and super informative and gave us a brief history of how fragrance came about and much more. Loved how we were able to create a couple of fragrances either for ourselves or for our party and found this was a great take home gift for the girls who attended the event! Joseph was also super accomodating with all the plans prior which made the booking and setting up process with such ease. Would highly recommend the class to those looking for something different and personalised! Thank you Joseph!

This is a fun interactive informative sensory fest.
Should have brought my 13 year old but got to go home with scents and a little more clarity about what I like and confirm what I don’t like. Joseph (Teacher) let’s you get on with it and available for questions and suggestions.
