My name is Joseph, and I started Kimberley Chocolates to produce high-quality chocolates in Sydney. I held a BSc in Food Science and wanted to make great chocolate more accessible to our community, including by combining it with flavours like chilli, lemon myrtle, and quandong (Australia's 'native peach'). Kimberley Chocolates won the gold award at the Royal Easter Show Chocolate Competition, and I started to appear in the media more often. People started contacting me to learn more about chocolates, and I realised that there is a great need for chocolate education, and that's where our chocolate workshops started!

But my passions and skills don't just stop at chocolate, I've also spent my fair share of time in perfumeries. I'm qualified in Organic Chemistry and Food Science from the University of NSW and worked for many years with the extraction of oils used for fragrance and food flavouring as well as at Unilever in the laboratory producing and testing perfume. Six years ago, I studied perfumery and with his my newly-refined sense of smell and skills in producing olfactory compositions, I began creating my own perfume. This led to sharing my knowledge and skills with others and three years ago I began running fun, hands-on perfume making classes in Lilyfield. As it is difficult to run classes during COVID-19 the Craft Perfume Box was created to bring the perfume-making experience to your home.

My teaching style is playful and fun, and very hands-on - the more sampling and laughing that happens, the better!

It would’ve been great to be on able to step out for some fresh air amongst all the smells maybe halfway. It also would’ve been great to get a little bit more of a lesson on how to mix sents, rather than just having a sheet of sents we could copy.

Joseph is kind, humorous and has a lot of chocolate knowledge. The workshop is clean and spacious. The interactive environment works well where you can chat, drink hot chocolate and eat chocolate dipped strawberries in between hands on tasks. A fabulous way to enjoy a Saturday morning- oh and you take home a delicious box of truffle chocolates !

I had Make Your Own Fragrance class with Kimberly Chocolates in Lilyfield.
He and two other assistant teachers were so welcoming, helpful and approachable. The location is easy to access, literally one minute away from the closest bus stop. The venue was so clean with lots of space to walk around the table with various fragrance bottles on. For beginners like me who is so passionate about scents, the ingredients provided there were just right number to explore. Otherwise I wouldn’t be able to leave the venue even after the class! The best part was we were given a wonderful opportunity to experiment freely without thinking too much (I did think too much however!). It is all about pursuing olfactory pleasures whether you have formal (even a little) knowledge of perfumery or not at all. Of course some basic guidelines were given, however, what I love most was the fact that all the attendants were welcomed to try whatever fragrance composition we believed would work! Don’t worry Kimberly would give you some help at the end to balance it out. ;-)
In this class I learnt that I need to trust my own sense rather than thinking too much and just give it a shot!
I left the venue with so much fulfilment about the class as well as myself and also two beautiful original fragrances! Definitely good value and you should try his class. I already would like to go back again!

This class was so much fun. I loved the freedom we had to play with the different oils - I thought it would be quite a controlled process, but instead, they let us experiment with the scents and be creative! We were given some guides as to what oils pair together well, and our teachers also provided one-on-one help and advice in relation to our individual perfumes. Very relaxed vibes - I also adored the location at the house - it was so poetic and elegant. My partner and I are excited to use our own specialty perfumes! We came away with two each. Class could involve more hands-on parts of the process, as it boiled down to assembling the chocolate treats, rather than making them.

Most of the time was also spent waiting for others to complete the step. Would help if multiple chocolate flooding machines were available.

I had a very enjoyable morning making both an oil based and alcohol based perfume.
Joseph presented a short talk on the history of personal fragrances then gave us a sheet detailing some suggested blends grouped under the required top, heart and base notes.

Thank you for your feedback.

In the summary of our introduction to this class, we set out to introduce perfume to the general public. In the class, we provided the opportunity for participants to make a bottle of perfume oil EDP and a bottle of alcohol-based fragrance EDT. We did not advertise as the first of many lessons to teach you all about perfume.

Thanks again for your feedback. I will take this on board and if there are enough people interested in learning in depth about perfume, I will list a longer class.

The class is great for beginners and it provides you with a lot of freedom to make 2 signature scents just for you. I enjoyed the little history behind perfume and the wide variety of fragrances available and you can tell the teachers are very knowledgeable.
There was a little mix up with class numbers but it shouldn't deter as everyone had ample time to experiment and gain feedback to perfect their scents.

A thoroughly enjoyable way to spend a couple of hours with a good friend, partner or family member. Joseph was a genial and patient teacher who clearly enjoys people and what he does. The venue contained all the necessary fixtures to ensure an authentic and interactive experience. Besides learning how to make divine chocolate truffles, Joseph held an informative Q and A session at the end of the class which provided some insight into the origins and history of chocolate. Interacting with my partner (as well as the other class attendees) made for a highly enjoyable and sociable atmosphere. I especially enjoyed the unexpected chocolate dipped fruit/Turkish delight and mint hot chocolate that were provided. But best of all was enjoying the delicious fruits of our labours during (and after) the class.

Enjoyable experience. Joseph and his assistant were so knowledgeable and warm. Good location, super close to Summer Hill station (around 5 mins walking). There were many choices of fragrance to choose from. The class began with perfume history and introduction of top note, heart note and last note. Joseph gave us a paper of perfume recipes that we could use as examples and tips to make a good perfume then we could go freely to make our own. Joseph and his lovely assistant also gave us suggestions based on what we want our perfume to be like, which was super helpful. Highly recommended!

I enjoyed creating my fragrance but found the process a bit confusing. Clearer instructions would have helped. Having so many little bottles on 2 tables and quite a few participants made it difficult to see all the choices and try them. I think having them set out differently would have helped, in named places for example. It was all a bit disorganised.

I had such a good time in the eau de toilette perfume making class with Joseph. Joseph was super personably and friendly, and introduced the session with a little history lesson on perfume. The make your own perfume class was great.
First up some really interesting information on the history of perfume then an explanation about Base notes, top notes and heart notes.
Then it’s time to create, So many possibilities and if you get a bit too carried away, Joseph is happy to help you get to the scent you’re after.
You leave with two cute 30ml bottles of perfume. Two different scents of your creation.
Everyone was lovely including the other attendees. Was a simply lovely afternoon. I highly recommend it.
I wondered if the scents are all vegan as I have many vegan friends who would love this.

Joseph, our teacher was friendly extremely helpful in guiding this Worksop given fifteen students descending him on simultaneously for help.
Very generous of him to have opened his own house as the workshop couldn't go ahead in the original place planned.
The Worksop had plenty of supplies and essential.oils for all of us.
While you are not going set a light in the world of perfumery, you certainly will make and take home one or two of your creations. To this end you have half dozen set formulations to start off from.
Excellent and certainly valuable introduction to the seductive world of perfume.
Highly recommend it.

Joseph is a great teacher, at the start of the class, he first explained the history of perfume, which my friend and I did not know a lot about. He also ensured that everyone was happy with their perfumes and suggested ways the scent could be changed or enhanced. The venue was changed due to a fire incident, however the new location was a beautiful house that felt very homely and comforting to make the perfume in. I liked how there was various essential oils and scents to choose from, everyone was able to make 2 perfumes each. This allowed me to experiment more with the first perfume whilst getting familiar with the different scents. Overall, the class is good value for money, I had a really fun time. It was a gift from my friend, I think this a wonderful gift idea that is a very unique experience.

Yvonne and Joseph were great teachers.
Joseph is very knowledgeable with the origins of perfume. We learned a lot from his introduction.
I will say it was very overwhelming but Yvonne was floating around helping the students with deciphering which scent they need to add to get the their desired finished product.
Once we were happy with the scent we took it to Joseph. He would give you his opinion, test it on your skin to see if it works well and then sprays it as the final step.
I bought this for me and my sister as her birthday gift.
We had a lot of fun and can't wait to attend another session down the track.

We got to take home 2 lovely bottles of perfume.

I've had an interest in perfume and fragrance for a while now, and taking this class was the first time I was able to practically play around with some fragrance notes and understand how different scents work together. Joseph and Yvonne were excellent facilitators and encouraged us all to experiment - but they were also there to help us and gave us all formulas to work with. Joseph in particular has a wealth of knowledge and helped everyone achieve the perfume they had in mind.

We were the youngest in the class and yet we feel like we got the most out of the class and now with the knowledge we gained, not only have we made our own scent we learnt about the history behind it, but in the future we also know what we like and what to look for in other perfumes. A fun morning for my two granddaughters to celebrate their birthdays. All materials were of top quality and the explanations/demonstrations guaranteed our success. Joseph was a fun and engaging teacher, clearly showing his decades of experience in the industry. Thank you for your feedback.

We did not get enough participants into the class on Saturday the 16th October. I emailed you and offered you a alternate class. You accepted that class and booked into Saturday the 30th October at 9.45am. In your email you cracked a joke by suggesting that you should get more chocolate by changing the date.

In your recent email you made it sound as if you were not consulted about the change of date, obviously, that is not correct as you have chosen an alternate date prior to the 16th October.

Joseph was great, explained things really well and asked if there were questions throughout the class. He and his assistant were approachable and friendly with a chilled attitude. He was very knowledgeable and a great teacher.

The only thing you need is an apron, all the rest of the material was given.

What I learnt:
How to make ganache (for chocolate mould/truffles
How to temper chocolate

I got a box of chocolates by the end, of ganache filled moulded chocolates, chocolate dipped chocolates, chocolate truffles, strawberries dipped in chocolate and a Turkish delight dipped in chocolate.

I feel confident now in trying to make my own chocolates.

Most people came with a friend/family member. I was on my own and it was fine.

We took this class as a Hens activity and we all have great fun. This was the first time everyone took a class like this so we all made questionable combinations! Didn’t feel nervous.
The materials were all good.

Joseph is one of the best teachers i’ve had for perfume making. Absolute legend. Allowed me to make 3 30ml bottles of perfume today as well as the last class I participated in last year. Joseph knows what your fragrance needs to give it that extra kick. Attending this class always feels like i’m a kid in a candy store, I could honestly make fragrances all day if I was allowed to. Absolutely loved this course and Joseph was so passionate and knowledgeable. He knew exactly what was missing in our scents to make them better, including what combination of scents worked together and what ones didn't. It was also really great to have a small class size of ~10 which meant we got lots of one-on-one help. I would highly recommend this course!

Bought this experience for my Girlfriend (23) and i (23).
We both enjoyed the class thoroughly. Joseph was a great instructor who really tried to get the most out of both our time.
Definitely worth the cost and we both look forward to doing a similar class in the future.
If you are on the ropes about doing this experience, just book it, you wont regret it.

It was a very slow start. Full hour went by without people having even done anything but watch. Picked up after that but theres no reason people cant make ganache at the same time. Good from then onwards, but finished 40mins early and felt like everything was being dragged out to kill time. However it was 39degrees so maybe the heat impacted the session? Joseph was lovely when he got going.
Made ganache, only 1 person tempers chocolate contrary to the description, RH en made 5 large truffles, smaller hand dipped truffles and chocolates from the 1 mix.

Joseph was very insightful and very hands on during the class. I walked away feeling very pleased with the experience. The venue is very clean, although it is on a busy road so parking might be a bit tricky. I was lucky to get there a bit early and found parking close by. I definitely would do this class again and I am super impressed with the fragrances I made. Perfect gift for the women in your life!

I can not rate the Kids Chocolate Workshop high enough! It was amazing Joseph you were fantastic with the kids and they all had the best day. You truly made my daughters 9th birthday so memorable. From mould making, filling the centre’s, chocolate dipping and the freckle smash, the workshop was so hands on and the chocolate itself was delicious! Not to mention the hot chocolates to wash it all down! Do not hesitate to book this class.
