In this class, you will be guided through the step-by-step process of learning to understand seven foundational spices by expert Sarina. You will begin with raw spice tastings and learn about the use and purpose of each spice when cooking. You'll also learn about the main aromatic categories and then blend some spices of your own.

After your spice blending session, you'll get hands-on and make two dishes: slow-cooked spiced lamb and spiced roasted eggplant and tomato. Get in touch with your inner cook and explores the various ways to enhance dry spices with oils to create complex dishes packed with flavour. Discover the spirit of spice and ​how it can change the way you cook!

What to bring
  • 20 g of turmeric
  • 20 g of Sumac
  • A medium-heat ground red chilli
  • Fine pink salt
  • 20 g of ground dried ginger
  • 20 g of true cinnamon or Sri Lankan cinnamon
  • 50 grams of cumin seed.
  • Olive oil
  • Ghee
  • Coconut oil
  • Two large, or three small eggplants
  • Six ripe tomatoes
  • 1kg of lamb shoulder
  • Diced into two-inch pieces (retain some fat)
  • Three carrots
  • Four sticks of celery
  • One yellow onion
  • Six cloves of garlic
  • 500 g of veal stock
  • Simple passata
  • Mustard oil (optional)
  • Soy sauce (optional)
  • Red wine (optional)

As a Spice Mistress, Sarina hears the song of spice and translates that for her students, teaching how to use spice in all of your meals, every day. Spice isn't just for Indians or for Indian food.
