Learn how to make a delicious Mexican feast to impress your friends!

In this cooking class, your teacher Reuben will teach you how to make a simple seitan in the style of "chicken", along with a traditional salsa Roja, a gooey vegan cheese you can make with pantry items, and corn tortillas from scratch.

This masterclass will have a focus on the fundamentals of seitan, how you can make it from scratch, and how you can adapt recipes to flavour to suit any cuisine.

Saturdays are for Sangria, so you will be able to sip as little or as much as you like for the duration of the class, eat what you cook and take home the rest. Recipes are yours to keep, and replicate at home to impress your friends!

I am Reuben, and I have 20+ years cooking experience gained around the world, working predominantly in Australia, UK, Mexico and Guatemala. I have worked a range of kitchens from Pub Grub to Micehlin Fine dining, to street food.

I have worked my way around Australia, starting my first job in a commercial kitchen at just 14! Over the last 10 years, I have spent my time working across London, opening 2 Mexican Street Food restaurants which were extremely well received, and were even placed in Time Out London's Top 3 Best Mexican in all of London. I then moved to Mexico where I spent around 12 months working and learning my favourite street foods, direct from the source! I then spent 6 Months running The dinner service for Guests at Earth Lodge in Guatemala, coming up with new menus daily, before returning to Australia and taking a job in a resort in the Whitsundays, and starting my own Mexican Street Food Truck, Cocina Comida. COVID brought me and my food truck back to Adelaide where I Opened my First restaurant under the same name. This Venture had me recognized by Tasting Australia as one of "SA's Hottest talent" and I was featured to teach a masterclass at TAFE SA.

I have extensive knowledge of a range of cuisines but have invested the last 7 years into Mexican Street Food, and over the last 3 years, Making Vegan Meats and cheeses to use with traditional recipes to create a sustainable and entirely plant based menu keeping traditional flavors with the growing vegan movement.

I love to teach people how to make Seitan and get tips on ways you can adapt and change it to suit any style of cooking. This not only empowers people to create their own healthy, additive free, meat substitutes, and in turn, eliminates the need to buy pre packaged options, cutting down on plastic waste in the home!
