Kathryn welcomed me into her home like an old friend. She is sensitive and cheerful, and her home lovely and peaceful.

I think I had a feeling about it before going in but was pleasantly surprised to find out that Kathryn would be guiding me to do things the hard wayworking the raw ingredients by hand, putting in the labour to build things from the bottom up with no short cuts - a genuine attitude and respect for the process.

The goma tofu felt minimal and full of vitality. It is 3 ingredients (one being spring water) worked into a lovely delicious dish.

We used an authentic grinding bowl and stick made of sansho wood, a pleasure to handle, and I stopped caring about time whilst slowly and patiently grinding away.

I learned, as described, how to make a simple, beautiful dish, but also found a touch of spirit in the process.
