Become a master of producing plant-based and vegan food in this chef skills six-week course in Brisbane!

This course runs for six consecutive weeks and is suitable for all skill levels. We will go around the world with this plant-based course and visit a new country each week. This will give you a solid repertoire of dishes to use for mid-week meals, entertaining, events and work lunches! You'll have so many wonderful new ideas and skills to dazzle and amaze yourself and your vegan foodie friends.

Course outline:

  • Week 1 and 2: Visit Italy and discover how to make various gnocchi, pasta and sauces as well as various other Italian classics like Involtini and Cannoli, panna cotta and more.
  • Week 3: Glorious Middle East and learn how to make delicious dips, flatbreads, tagines, spice mixes, pastries and sweets.
  • Week 4: Authentic Thai cuisine and you will learn to make our own fragrant Thai curry pastes, sticky coconut rice and caramel banana coconut panna cotta dessert.
  • Week 5: Spanish Tapas where you will learn how to smoke your own dishes, plus various tapas.
  • Week 6: Asian street food like Gyoza, Karaage, Indian Curry Pastes and Indian delicacies.

This hands-on, interactive cooking course is designed for those with a passion for vegan cooking but perhaps are lacking the necessary skills or confidence to absolutely shine! Also perfect if you're starting your own food business such as a B&B, cafe, catering company, coffee shop or food stall.

During the course, you will learn valuable kitchen skills such as:
  • Bread-making: focaccia, pizza, rolls, loaves, stuffed bread, rolls, pita and naan bread
  • Sauces, dressing, vegan jerky and preserving
  • Reductions
  • Flambés

  • Smoking
  • Overview of ingredients

We should not be spending hours slaving away in the kitchen. Plant-based cooking can be fun, creative, fulfilling and rewarding. We will prepare show-stopping meals based on the fundamentals of essential cookery techniques but you will learn how to simplify and adapt these skills to make meals which take minimal time or effort to prepare! The focus is on enjoying the experience, gaining confidence, and learning essential cooking and presentation techniques. Perfect for if you just want to improve your vegetables sides and accompaniments no matter what diet you follow.
