In this hands-on class you will learn all you need to know about wafer paper a material that has been around for years but mostly used in the confectionery industry (think of Nougat).

It only got rediscovered recently for making beautiful edible flowers used in cake decorating. Wafer paper does not get affected by humidity, which makes it a perfect medium for Australian weather conditions. It is also ideal to decorate buttercream cakes, as the blooms are very light and can be kept in the fridge, unlike gum paste flowers.

During this fun class, you'll be taken through the basics of wafer paper, how to manipulate and shape the paper into realistic looking petals and foliage. You will also learn different colouring methods as well as making centres from wafer paper. Lastly, you will be using floristry skills to assemble your edible beauties into an elegant floral spray.

The flowers and foliage selection you will learn in this class include Dahlia, Zinnia, Daisies, Hybrid tea rose, Marigold and Rose leaves.

You will be provided with a light lunch as well as refreshments during the day. Please let us know if you have any dietary requirements.

Award-winning cake artist Anna Maria Roche has well over 25 years of industry experience.
Trained as a qualified chef/pastry chef she worked for some of Sydney’s top hotels and cake shops, designing and creating cakes for people from all walks of life.
Anna Maria was involved in several best selling cake-decorating books and her work has been featured in many magazines. She also was involved in the popular Lifestyle Channel TV series, “Planet Cake”.
Anna Maria has successfully taken part in many prestigious cake competitions and has won many awards.
In October 2013 Anna Maria founded her own business, “Anna Maria Cake Design”.
Besides designing and creating gorgeous cakes, she creates tutorials for companies to promote their cake decorating supplies and equipment.
She conducts private lessons and teaches at the prestigious Le Cordon Bleu and other private institutions across Australia and overseas.
She is very proud to see how her students' individual journeys have progressed. Many have gone on to have successful businesses of their own in Australia and overseas. Anna Maria looks forward to sharing her skills with you!
