Learn how to make Wagashi vegan desserts at this fun and hands-on cooking class in Sydney! You will get to take home your delicious creations at the end of the class.

This two-hour class is beginner-friendly, as you will be guided step-by-step by your experienced teacher Kathryn. Wagashi are traditional Japanese confections and are typically made from plant-based ingredients.

During the class, you will learn what Nerikiri dough is which is made from natural white bean paste. You will then learn how to colour your dough and create different tones, hues and shares as well as make three different designs. All ingredients used are plant-based, vegan and natural.

At the end of the class, you will be able to enjoy your cute handmade desserts and matcha/ genmai tea.

Please note: A professional class on Wagashi dough making is also available for cafe owners, teachers, homemakers and/or artists (two hours).

Your teacher

An ex-art educator, life coach, BodyMind Institute superfood nutritionist (2001) and author of three books with one newly published in 2019 entitled “Bliss Pure Foods: Living in Full Colors”. Owned a raw/vegan cafe for two years before going full time into Nature, planting, travelling and providing training around meditative food making, eco-arts and crafts, vegan home cooking that includes healthy fermentation techniques and creative recipes.

We really enjoyed our class. Was worth the travel from Sydney. My teenage daughter was apprehensive at first but by the end she loved it. The teacher was very encouraging and gave interesting facts along the way. I think we rushed ourselves
(not the teacher) and needed to understand that the class was just as much about the craft as it was a lesson in tranquility and patience. Highly recommend.

Kathryn is an excellent teacher, patient and passionate about her craft. Wagashi making is labour intensive and requires skill. Kathryn walks you through it all and makes it thoroughly enjoyable. At the end of the class you have tiny delicious desserts to take home and a sense of accomplishment. All materials provided. Venue easy to find. I did this with my mum and we loved it.

This Wagashi class was lots of fun and really meditative. Kathryn is a lovely teacher and really great at communicating and helping us when we're confused or struggling to get it right.
Kathryn spent lots of time prior to the class preparing the ingredients and because of that the sweets tasted lovely, not too sweet but the perfect amount.
Wagashi is the kind of food that requires really hands-on instruction and help, and the results came out really nice, especially for my first try! The class is lots of fun and I'd definitely recommend it to anyone interested

Throughout this course you learn the crafting and intricate detailing of Wagashi in an easily approachable manner. Loved this class! Kathryn was a fantastic teacher and talked us patiently through the steps of preparing and colouring the Wagashi dough, followed by putting in the filling, shaping and decorating. We came away with five Wagashi each, all different designs. They were almost too pretty to each (but we ate them anyway because they were delicious!) highly recommended, will definitely return for Kathryn’s other classes.
