Learn how to make artisan sourdough in your own kitchen with Yoke Mardewi (TedXPerth 2019 Speaker: Grounding Yourself with Sourdough) in this hands-on live streaming class! Yoke has published world wide 4 books and ebooks including her long standing first book still in print 10+ years later, titled Wild Sourdough and Sourdough from Pastry to Gluten Free Wholegrain
In this class, you will learn new techniques, high hydration or wet dough, hand shaping, bannetons and most importantly, have lots of fun accompanied by some delicious delights!
We will explore new ‘ancient’ grains such as Emmer, Khorasan (Kamut), Heirloom, Purple wheat, all unhybridised original grains, Australian organic/sustainably grown and stoneground and Semola and Manitoba.
Yoke will be covering different types of artisan sourdough, how to mix different types of flour, technical discussion on how to create the sourdough you desire (eg. hydration, scoring, bulk rise etc and how these affect your final loaf), as well a quick refresh on the 'no waste' method of keeping your starter and how to make a low FODMAP sourdough.
As Yoke demonstrates the artisan sourdough bread-making process, you can follow along making your own dough and taking notes so you can repeat the process as many times as you please. This class is a step up in the right direction to make sourdough loaves that taste better than bought ones but look as good as the ones sold at artisan bakeries anywhere!

Following successful careers in Fashion and Finance, Yoke Mardewi took the plunge and decided to work at her first love and passion – the making and sharing of food and in particular, sourdough bread-making.
Yoke runs cooking classes with a specialty in sourdough bread-making. She has written the book ‘Wild Sourdough,’ featured on Western Australian TV, radio and in various food and health websites, newspapers and magazines.
Yoke was also a TedTalk speaker in 2019 running a segment 'Ground Yourself with Sourdough' which touched on the slow, purposeful process of making sourdough and served as a reminder to notice what gives us simple joy - and why everyone needs to find their 'sourdough'.
Her cooking classes are as much about sharing her warmth and passion for life as they are about the joy of food.
Yoke is a member of the Artisan Bakers Association and Slow Food, and is a keen supporter of organic/bio-dynamic farming.
She supports and encourages others to have the courage to pursue their passion in life.
