Join us for a unique Moroccan cooking class in Melbourne and learn to savour and appreciate all that makes this cuisine so remarkable and different.

Experience the spices, aromas and textures and cook whilst enjoying the ceremony of making a pot of fragrant, refreshing mint tea.

Sample menu (vary with the seasons):

  • Moroccan Batbout, a flat bread eaten at every Moroccan meal, - Honey salted aubergines, - Bessara, a Moroccan fava dip as well as a soup
  • Cucumber and mint sorbet
  • Beetroot and orange spiced soup, served either hot or cold
  • Berber omelette tagine with Marrakesh meatballs
  • Chermoula marinated aubergines
  • A variety of tagines, such as chermoula duck, lamb, beef and vegetable tagines
  • Couscous
  • B’Stilla, a spiced, sweet and savoury, layered pigeon or chicken pie
  • Sardines butterflied with chermoula, oranges and spices
  • Rosewater meringues with dates and almonds
  • Saffron custards with cinnamon oranges

During the class, you will be transported into the exotica of this mysterious and wondrous land. Hear our stories of the Berber cooking classes, camel riding and dinner under the stars, in the Sahara Desert with its beautiful, lush, peaceful and cool oases and much more. You may be inspired to travel there yourself on one of our Morocco Beyond the Bay tours!

At the end of the class, you can sit back and enjoy all your dishes as a shared feast at the table, accompanied by a glass or two of wine and good conversation.

Please note: Public dates for this class require at least 4 guests to run. In the unlikely event that we don't reach this number, we'll cancel the class; in this case we'll inform you and allow you to get a refund or reschedule, so please watch your email/SMS one day prior to the class.

Tonya is Melbourne trained at Holmesglen, in Paris at Le Cordon Bleu and the Ritz Escoffier and in Burgundy at La Varenne l’Ecole de Cuisine. She has taken culinary tours to France in the Dordogne and Provence, plus she has visited regional cooking schools in the Dordogne, Normandy and in Tuscany, Italy. She regularly takes culinary tours to Marrakech, Morocco, where she perfects many of the Moroccan dishes she discovers there, cooked to perfection by her friend and chef colleague, Edwina Golombek, who owns a culinary, residential cooking school riad in the heart of Marrakesh. A visit and her pilgrim's walk along the Camino de Santiago de Compostela found Tonya in love with the history and culinary traditions of Spain, so she has added these experiences to her Spanish cuisine cooking classes as well.
Before training as a chef, Tonya was a librarian, information manager, library trainer and library consultant. Cooking on the Bay proudly owns an extensive library collection of over 3000 cookbooks and books related to food, cooking, France, Italy Morocco and the Mediterranean.
