Ready to stop second-guessing yourself in the kitchen? This six-session cooking course at The Studio Cooking School @ VENU is designed to take you from stressed and stuck to confident and creative.
Over six Monday night sessions, you’ll build serious “cheffy” skills with hands-on guidance from Chef Mel and her team. This isn’t about blindly following recipes. It’s about understanding flavour, technique and timing so you can cook with confidence at home.
If you miss a session, you can make it up with another class (one week’s notice required). The course can be delivered 80% gluten-free. Other dietary requirements aren’t possible. Choose the best date that suits you from the calendar. If there is a public holiday, we simply skip a week.
Each week focuses on core techniques, professional skills and bold, flavour-packed dishes you’ll recreate again and again.
Week 1: Fire and Foundations
  • Master searing and the Maillard reaction, plus salt, fat, acid and heat.
  • Skills: Knife basics, vegetable cuts, bread-making, stocks, sauces, gelatine and sugar work.
  • On the menu: Perfect steak with sauces, truffled potato rosti, roasted vegetables, jus vs gravy, rosemary dinner rolls, lavosh, grissini, sticky Asian stir-fry and lemon panna cotta.
Week 2: Poultry Mastery
  • Learn professional knife skills, trussing and deboning.
  • Skills: Spatchcock, roulades, emulsion sauces and blowtorching.
  • On the menu: Gruyère roulade, poached eggs with burnt butter hollandaise, brioche, around-the-world chicken and classic crème brûlée.
Week 3: Pork and Spice
  • Achieve perfect crackling for life.
  • Skills: Twice-cooking techniques, braising and a spices and seasoning masterclass.
  • On the menu: Braised Moroccan belly with crackling, sticky plum and ginger ribs and a flavour-packed spice night.
Week 4: Patisserie and Slow Cooking
  • Tackle the foundations of pastry with confidence.
  • Skills: Choux au craquelin, shortcrust and puff pastry (lamination), crème pâtissière, spun sugar and braising.
  • On the menu: Croquembouche, porcini chicken tarts, braised Moroccan lamb shoulder with date and pistachio gravel and apple lattice pie.
Week 5: Fish, Dumplings and Preserving
  • Handle delicate fish like a pro and explore traditional techniques.
  • Skills: Crispy skin fish, stovetop smoking, artisan preserving and dumpling folding.
  • On the menu: Crispy skin fish of the day, house-smoked salmon, handmade seasonal preserves and Silk Road steamed dumplings.
Week 6: Plating and Performance
  • Bring everything together with professional presentation.
  • Skills: Gourmet pasta, gnocchi, sauces, advanced plating, stacking, knife speed, sharpening and care.
  • On the menu: A styled celebration feast featuring your best work.

I have been a cooking school teacher since 2001. My passion is food and people, I am a published author and cultural gastronomer...I travel the world and discover cultural food.
