Pasta is incredible, there is just no denying it! So come and learn how to make two kinds of egg pasta in this hands-on cooking class in Ascot Vale.

In this step-by-step class perfect for beginners, you will learn how to combine flour and eggs to make a soft, silky dough by hand and roll it using a pasta machine.

During the class, you will make two kinds of egg pasta typical to the Emilia-Romagna region, tagliatelle and tortelloni.

Tagliatelle is a well-loved and well-known pasta. This pasta looks like long, flat ribbons similar in shape to fettuccine, we will cook them in a creamy mushroom sauce or a rustic sausage and peas ragu.

Tortelloni are a kind of ravioli, that will be filled with one of the most decadent fillings: the simple and delicious combination of slowly roasted spinach and ricotta served with a brown butter and sage sauce.

When our pasta is ready we will have lunch together with a tasting of great Italian wine. Please note that both sauces can be vegetarian.

During the class we will serve tea and coffee and we will be making enough pasta so that you can take some home and share it with your family or friends.

Very absorbing three hour cooking lesson which will finish off with a sit down meal of the pastas you made in Marina’s kitchen. We learnt how to make tagliatelle and cannelloni pasta for our two dishes. Marina is a pleasant teacher and she will share some cultural insights from her homeland, Italy. Take home recipes were provided. Tram from the city will take you almost to the doorstep. Make sure you go hungry!

Marina’s class was quite splendid. My girlfriend and I had learnt how to properly make pasta, including all the tips you don’t get in a recipe book. We now understand the how and why of pasta making. This is great for novice pasta makers. Highly recommend. We also learnt how to make ragu in a way that blew my mind! Who would have thought there was a better way to do it - thanks chef Matilde for the great tips. It was fun learning in a small group and we all got to make our own pasta and take home the leftovers!

This course is incredible value. Both teachers are so knowledgeable, I learnt so much including why my sage was never crispy when I tried brown butter sauces. The pasta we made was so beautiful and homely, I was taught everything I need to feel confident practicing on my family. The venue was perfect too: just the right size to fit our group and so nice to be welcomed into someone's home. We not only got a massive feed from the beautiful ingredients but also got a lovely take-home goodie bag! Highly recommend!

Class environment in home made it a great experience. You could imagine making the pasta in your own home. Teacher very helpful, practical pointers, and hands on work. A great range of pasta. The class interacted and helped each other. The food we prepared was cooked and presented as in ones own home, along with snacks and wine through out the day. More like a family gathering than individuals learning. Highly recommend this class and teacher and assistant.

Got this as a present for my son. We made tagliatelle with vegetable
ragout and spinach ricotta tortellini with sage and burnt butter sauce Marina was a great teacher and very attentive. She created a lovely relaxed environment to learn and both she and Mathilde (chef in charge of sauces) were full of knowledge. Marina and her helper (a qualified chef - apologises l forgot her name) were both very friendly, helping out when needed. We were treated to some Bruschetta, wine and traditional coffee.
Each person had their own cooking station to make the pasta and we went at a pace that everyone was comfortable at and could enjoy.
We were shown how to make the filling for the spinach and ricotta tortellini and the mushroom sauce for the tagliatelle.
Afterwards, we sat around the table like a traditional Italian family and enjoyed our pasta.
We were given the opportunity to take home leftover.
I would highly recommend doing a class with Marina as she is thorough and made the class fun. She answered any questions that we had.

Marina and her offsider were both brilliant! Such amazing hosts and so helpful in sharing their knowledge and experience of all things pasta and Italian culture in general. The teaching was entirely hands on with expert help along the way! The menu and range of pasta techniques really gave a good overview and helped us gain confidence that we could use our skills at home. We loved every minute. All guests were lovely, the bruscetta and wine were added bonuses and we had a fabulous day. Highly recommend!
