Miso paste is a fundamental and incredibly versatile staple in Japanese cuisine, renowned for its rich umami flavour and numerous health benefits. More than just a soup base, homemade miso is a truly rewarding experience, resulting in a unique paste that will transform your cooking.
What you'll learn and do:
  • We'll demystify the core components of miso: soybeans, koji, salt, and water. Learn about the role each plays in the fermentation process.
  • You'll actively participate in every step, from preparing the soybeans to mixing the ingredients and packing your batch of miso into a container.
  • Discover koji, the essential mould that drives the fermentation and gives miso its characteristic flavour and aroma.
  • Learn the secrets to successful long-term fermentation, including proper storage, monitoring, and what to expect as your miso ages.
  • We'll explore how to customise your miso by adjusting ratios or using different types of beans for unique flavours.
