Immerse yourself in the art of knife making with our most popular one-day workshop: the Japanese-Style Chef Knife Class.
In this hands-on experience, you’ll forge, grind, shape, handle and sharpen your very own custom chef knife under the guidance of the NGKnives team. Designed for beginners but deeply rewarding for anyone who loves cooking, tools, craftsmanship or working with their hands, this class gives you a real taste of what goes into making a functional blade from fire and steel.
Japanese-style chef knives are loved for their clean lines, precision and versatility in the kitchen. In this class, you’ll create your blade using high-quality carbon steel, a material known for taking a beautiful sharp edge when properly made and cared for.
You’ll choose from a range of Japanese-inspired knife profiles, such as Gyuto, Nakiri, Santoku and more, before learning how shape, balance and blade geometry affect the way your finished knife feels and performs.
Class overview:
  • Choose from a variety of Japanese-style chef knife templates, including Gyuto, Nakiri, Santoku and more.
  • Learn the fundamentals of knife design, blade shape and kitchen knife geometry.
  • Heat, hammer and shape your blade using traditional forging techniques.
  • Refine your knife through grinding, shaping and profiling.
  • Fit your knife with a timber handle, giving it balance, comfort and character.
  • Polish and sharpen your blade to create a functional kitchen knife you can proudly take home.
  • Receive step-by-step guidance from experienced instructors throughout the entire process.
This is a full-day, hands-on workshop where you’ll be on your feet, learning real skills and creating something truly useful. No previous knife making or blacksmithing experience is needed, just a willingness to give it a go.
By the end of the class, you’ll leave with your own handcrafted Japanese-style chef knife, a deeper appreciation for the craft, and the kind of “I made this” feeling you can’t buy off a shelf.
This is not just a knife making class. It’s a full-day forge experience for people who want to make something beautiful, practical and completely their own.
