We will create quick, nutritious, flavour-packed meals that prove healthy food can be exciting, colourful, and satisfying, while still being budget-friendly and perfect for weeknights.
Menu We Will Cook
Chicken Involtini
Chicken breast stuffed with cheese, herbs, and garlic, baked in the easiest, laziest sugo. All in one dish – perfect for weeknights or dinner parties when you need to impress without stress.
One-Pan Suntanned Chicken
A versatile recipe with endless flavour variations. Mix and match rubs, sides, and accompaniments. Family-friendly, meal-prep friendly, healthy, and adaptable.
Aburi Salmon Stack
A lazy sushi twist. Build a fancy salmon stack or turn it into a good-mood bowl for a quick weeknight meal. Options for broccoli or cauliflower rice. Includes a demonstration of 10-minute sweet potato julienne fries – nutritious, crispy, and guilt-free.

Hi! My name is Mel Alafaci. I am the proud founder of Vanilla Zulu cooking school in Brisbane, established 2011. I also founded Gecko Culinary Adventures Cooking School in Durban, South Africa in 2001.
I have been a cooking school teacher since 2001. My passion is food and people, I am a published author and cultural gastronomer...I travel the world and discover cultural food.

You can do my cooking courses at your own pace, in your kitchen, with me only a message away to help you as you level up your cooking skills and confidence. I am also a published author and have written 13 cookbooks...food is my everything, and teaching is my passion.
