Killara Distillery was started in 2016 by second-generation Australian distiller Kristy Lark. Kristy grew up with a still outside her bedroom door and has been involved in the distilling industry for over 25 years. She is passionate about the distilling industry and is focused on innovation without compromising tradition. She is growing the legacy in her own way, while continuing the traditions of her pioneering parents.Kristy’s passion is to create with intention, hand crafted Tasmanian spirits including Single Malt Whisky, Apothecary Gin, Tasmanian Vodka and seasonal liqueurs. Killara Distillery is located on 26 acres in the heart of the Coal Valley near Richmond, and offers a complete Garden to Glass experience, with botanicals for the spirits being grown on site or sourced locally then distilled slowly in locally made copper pot stills. With a strong focus on quality, all products are being made and bottled by hand. Killara Distillery brings consumers in on the journey by showing the process of creating high quality, world class spirits from growing the botanicals, educating on which parts are used (flowers, roots, seeds etc), the distillation process, maturation and then enjoying the spirits. Taking guests on an experience that they can become excited by, be involved in and nurture the connection with what they are consuming.
