Discover the warmth, tradition, and irresistible flavours of Scandinavian baking in this hands-on culinary workshop designed especially for Newcastle Food Month. Inspired by classic Nordic celebrations, this immersive baking experience will have you kneading, whipping, layering, and decorating your way through three iconic Nordic creations.
Guided step-by-step by Yellow Door Kitchen’s pastry instructor, you will make:
  • Cinnamon Buns (Kanelbullar) – pillowy soft, delicately spiced, hand-rolled, and glazed to perfection
  • Princess Cake (Prinsesstårta) – a show-stopping dome cake layered with sponge, custard, whipped cream, and finished with pale green marzipan
  • Smörgåstårta – Swedish Sandwich Cake – savoury layers of cream cheese, seafood, herbs, fresh vegetables, and Nordic flavours, decorated like a celebration cake
Throughout the class, you’ll learn essential Nordic techniques including enriched dough preparation, shaping and proofing, sponge layering, piping, glazing, and traditional decorative finishes.

The passion for baking and cooking started in childhood for Janet Newton during the long Christmas holidays she spent baking with a Czechoslovakian family friend, Irene. During this time, the family was provided with an endless supply of traditional tarts, slices, biscuits, and cakes.
The wonderful love of sharing food with family and friends was born out of these one-on-one cooking lessons and is the inspiration behind the opening of The Yellow Door Kitchen.
Janet trained as a Pastry Chef at the famous Le Cordon Bleu cooking school and has many years of experience working in restaurants and patisseries. Her ability to combine flavors and her passion for baking is infectious and will ensure students are transported into a wonderful, creative world of cooking during her classes.
