In this fun and hands on cooking class you'll get to combine your love of American style smoking with barbecuing!
You'll learn all about barbecue techniques from the four main barbecue regions in the United States including Texas, Memphis, Carolina and Kansas, and the differences between them. The class will kick off with a complimentary beer and the Chef will give you a quick run through of the session and the menu.
In the smoking class, there will be meat that has been pre-smoked and cooked so you can taste and discuss the end product. You and the Chef will also prepare fresh meat for smoking to demonstrate and learn the techniques. The chef will cover equipment, the Texas crutch method, troubleshooting and temperatures.  
During this class you will be shown tips on rubs, timing, and temperatures and of course the perfect accompaniments, to ensure that you can produce mouth watering, fall off the bone meat every time you have a barbecue.
At the end of the class you'll get to enjoy your delicious barbecued and smoked meats!

BBQ School endeavours to run all classes scheduled. However, occasionally not enough bookings are made to warrant the class proceeding or a circumstance out of our control dictates that the class will not go ahead. However, it did feel like a lot was squeezed into the session, especially considering that smoking meat properly takes longer than four hours. I thoroughly enjoyed the class overall, but at times it felt a bit rushed, particularly as we were the final Sunday session. A late start due to the previous class running over seemed to put pressure on the chefs to wrap things up quickly. That said, the Chefs were knowledgeable and passionate, and I still walked away with valuable skills and a better understanding of the smoking process. Would recommend, but maybe with a bit more time allocated to let the experience breathe and or a diffent time session for the class

BBQ is a bit of an art, let alone smoking or conducting things such as open fire cooking. I felt that the subject/topic is Defiantly something to continue in order to build a culture of cooking enthusiasts. Points to Fix/Improve: There was not enough cooking. I understand that BBQ is a challenging topic due to the cooking lead time but there was next to nil hands on practical skill. Out of the 20-25 learners who attended, we each got the opportunity to prep one single component which maybe resulted in chopping a quarter of a cabbage or taking the seeds out of 5 jalepenos. The rest was observing a process or asking questions but the entire activity lacked the physicality of what a typical cooking class contains. Having completed a number of cooking experiences (Greek, Italian, Vietnamese, French) this activity paled in competition at in some cases double the cost. A great example is a Melbourne class I attended for French cooking. For roughly $200 for a learner group of 8, the class collectively cooked 10 dishes with each learner completing at least 4 almost independently. Recommendations for the future: - Increase interactive components. For applying the rub, you have 3 different pieces of meat, select 6 learners in groups of 2 to apply and handle that process - Increase cooking activities. Have students in 5 different groups all make the same dish from scratch ie: the brownie. You could have very easily allowed all students to prep, fill and cook 5 jalepeno poppers each from start to finish. There were not even enough of the meal to allow all students to eat and taste - Passive lessons. Discuss types of knives, sharpening techniques, demonstrate how to build a fire, explain smoke and how too much white smoke occurs and why - More cooking. Simple easy wins like Portuguese chicken skewers over a Coal bbq. Students dice a breast, whip up a marinade from a group shared resources and skewer/cook their own bbq kebabs Overall: I appreciated the intent but I would not recommend or pay $160 for that experience again.

BBQ School was founded in 2004 by internationally trained chef and passionate foodie Ben Farley who identified that while many Aussies were really into cooking on the BBQ, most only had one or two recipes they knew how to cook really well.
Showing keen BBQ’ers how to prepare and confidently cook a collection of simple, effective and tasty recipes was the best way forward and so in 2004 Ben turned his back on a career in Sydney and London high profile restaurants and founded BBQ School.
In our classes, we assume no knowledge but have found that the more a student knows about BBQ cooking, the more they learn from our experienced chef presenters.
To date around 90, 000 people have been taught through the BBQ School.
Our head office is in Willoughby, Sydney but we also operate regular classes in Sydney's Centennial Park, Melbourne, Brisbane and the Hunter Valley and each year the School continues to grow in response to people who wish to cook with more flair when entertaining.
