This is a fun cooking class with Chilean-born and Brunswick-loved Nelson Burgos, where you'll learn how to make some classic and not-so-classic Chilean empanadas and their salsas. Empanadas are a common baked or fried pastry in Spain, North Africa, and Latin America, including, of course, Chile.
We'll begin with the delicious buttery pastry and the various folds, followed by the traditional filling of beef, raisins, and egg. Then, the crimped three-cheese empanada that should come with a warning: they are hot! And for a modern twist, curried prawns and scallops.
No empanada is complete without the accompanying salsa, and Nelson will share three of his favourites with you to match your empanada.

Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.
In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.
