French Cooking Class: a Taste of Provence

Join us for a three-hour action-packed, yet completely relaxed French cooking class in Brisbane. At the end of the cooking lesson, you'll enjoy the amazing three-course meal you've worked together to create!

Learn to create delectable textures and flavours and how to combine them to deliver sophisticated French cuisine. With an experienced chef to guide you through you will help prepare the delicious meals and then enjoy eating them too.

On the day we will create one dish from each of the following:

Starters

  • Delectable Pate made with chicken livers and layered with Shiraz and strawberry Jelly served on a freshly baked mini-baguette sprinkled with Parmesan and rocket
  •  Confit egg yolk served with Parma ham pear salad served with  goats cheese in a vol au vent drizzled with a caramelised fig glaze
  •  Quenelle of Chicken and Porcini with truffled sauce blanc

Main

  •  Coq au Vin made with spatchcock hen served with a twist on gourmet mash...the ultimate French decadence
  •  Beef tenderloin with burnt basil and black pepper butter, on a baked stack mirepoix of vegetables
  •  Classic Chateaubriand: butter, shallots, thyme, bay leaf, mushroom and a brandy flambé or Jus Lie

Sides:

  •  Baked Cauliflower with Sauce Hollandaise
  •  Potato Dauphine
  •  Bundles of beans wrapped in smoked streaky bacon and pan-fried in butter
  •  Parma Ham Peas

Dessert

  •  Apple Jalousie with house-made apple and cinnamon ice cream
  •  Creme Brûlée classic and timeless
  •  Deconstructed Bomb Alaska -a red velvet  sponge layered with freeze-dried raspberries smothered in meringue and flamed with Cointreau served on a bed of creme patisserie

I had a really great French Cooking Class there with my boyfriend and had the pleasure to meet nice people as well. The place is really good, although i missed some tips because it can get very loud with two classes at the same time. However, I left the class so full and with big pots of food too! I would definitely go back for another class (maybe pastries?). Also, shout out to the teacher who were so patient and had so many good tips!

Ellie was knowledgeable and professional yet friendly and welcoming. She shared her knowledge through demonstration as well as going to each group to ensure they were managing the dishes giving advice as required.
The venue was good except when there was a lot of cooking going on and the ventilation didn't work too well. My eyes were sore from the smoke in the room.
The additional staff on hand to clear the plates etc were a bonus to ensuring that the workshop went smoothly.
I really enjoyed the cooking as well as the food and would definitely come to another workshop. I will recommend this service to my friends.

Really had a good night. It was a little bit disorganised at times. I think if most non-perishable ingredients were measured out individually on each bench, it would save time and avoid going back and forward across the room. Food was great, and did enjoy ourselves.
