I am Marco Graziani. I have been a certified Italian Neapolitan pizza chef in Brisbane since 2014 and have contributed significantly to the local culinary scene there. My journey began at Gusto da Gianni, leading to the launch of Gianni's Kitchen. I have introduced Neapolitan Pizza to many different restaurants including Casa Cibo in Chermside and the famous Tartufo in Valley where I helped get the restaurant certified by the AVPN "Associazione Verace Pizza Napoletana", of which I am a member.

My passion for teaching and sharing knowledge led me to social media like Instagram and Youtube, where I connected with pizza lovers globally. I offered daily recipes, tips and engaging experiences. This has led me to host private pizza events and courses. I am dedicated to quality so I partner with local distributors to ensure my pizzas are made with only the best ingredients and the right equipment.

At Graziani Homemade Pizza Academy in Brisbane, I am committed to cultivating a culture of the pizza connoisseur, envisioning more pizza events, courses and collaborations, both locally and internationally. My mission is to elevate the appreciation of traditional Italian pizza by making Graziani Homemade Pizza Academy a key destination for Neapolitan pizza experiences.

Marco was absolutely fabulous. You can tell he’s passionate about what he does and really loves being able to teach others the craft. He is patient, hands on, asks questions to figure out where you need help and critiquing. Our two young kids were home at the time and a bit rowdy, and he gave them some dough to play with, had a chat to them and made them laugh. It was relaxed and fun, but wholly informative and took the “scariness” out of learning how to make traditional Neopolitan pizzas at home.
