Italians are masters of understated culinary art. With this Italian cooking class in Brisbane, now is your chance to learn the techniques behind creating simple yet delicious dishes that will wow your friends and family.
Your cooking class begins with a heart-warming welcome where you make hand stretched olive and rosemary Focaccia over an introduction and chat with your fellow budding chefs. 
You will work in small groups as our Chef guides you step by step. In this class, you will learn the tricks and tips on how to make bread, pasta and delicious sauces. On top of that, you will also have the opportunity to learn an Italian sweet dish - the fabulously light and refreshing panna cotta, a versatile, delicious Italian dessert.
This is fun, informative and will teach you how to produce stunning authentic Italian dishes that are steeped in tradition and flavour!
The Rustic Italian Menu:

We can cater for vegetarian and dairy-free attendees; just let us know when you book in! We can't offer this class Gluten Free.

Dietaries - only the 'available dietaries' listed above with the Menu are catered for. We cannot cater to other dietaries for this class.
Come alone, bring a friend or partner, or bring the whole family!  Children from 9yrs with a passion for cooking are welcome!
VZ Class format is a mixture of demonstration and group cooking practices. Instead of individual work stations, students will work in pairs and cook in groups of 4. And afterwards, enjoy a feast of the meals prepared. Demonstration aspects of classes ensure we cover enough content to make you into a fabulous chef.
Please note:
  • The menu is based on available seasonal produce and is subject to change at the experience provider's discretion. This menu cannot be offered gluten-free. 
  • Pasta will always be included. You will work and cook together as a team, and shared workspace and the kitchen equipment with other participants. A group cooking session with partial group participation is the most effective and fun way to add to your cooking skills.
  • To ensure the class finishes on time some elements of the dishes are demonstrated.
  • The class is held in a fully licensed venue so you are unable to BYO.

Introduced himself and informed allof what was going to be the procedures for the class. As we followed the demonstrations and exercises the class flowed very well. all of the foods that we preped and cooked or had chilled during the class was very good and left us wanting to follow up with cooking at home and to undertake the next class. Although some of the ingredients was prepared, we did make pasta and foccacia bread from scratch. And also Panna Cotta. The only thing I would critique is it was hard to hear the teacher at times when she was providing instructions or a demonstration because there was another group very close by. It would be helpful is the teacher had a microphone to hear better.

Chef Sean is clearly knowledgeable, but his delivery leans into awkward, outdated humour—like a 90s stand-up routine full of sexist jokes. Several steps in the cooking process are omitted or pre-prepared (e.g. ravioli sauce and stuffing). Pros Chef clearly knows his stuff. Great information on vanilla beans and how they are harvested and pollinated—genuinely very interesting! Great tips on using the pasta machine. Passionate and open to all ages. Had a ramp and disability toilet, so based on what I saw, it is disability-friendly. Makes a delightful espresso martini. Taught us how to make focaccia, pasta for ravioli, etc. Cons Lots of steps have been performed for you; e.g. pre-made ravioli stuffing, pre-made ravioli sauce. Pre-measured ingredients (e.g. flour, yeast, etc.). Even if you book as a single or couple, you will be working in groups of 4. Parking can be difficult in this suburb. Gendered Environment & Inappropriate Jokes: The gender dynamics were noticeably off. For example, there were three toilets: one accessible, one labelled “men, ” and a second also labelled “men” with a small women’s sticker awkwardly added above it. Chef Sean repeatedly made strange, sexist jokes throughout the class. Some examples include: “I have a magic table at home that cleans itself—the men here would know about that, eh?” When discussing portion sizes: “Ravioli serving size is 6; for a main it's 8—unless you're a woman, then it's 4.” “The men will know this one, ” referring to how beer is made. “We have a magic dirty dish station—so men, take advantage.” These kinds of comments were frequent and uncomfortable. Honestly, I don’t think he realised how off-putting or outdated they were. Takeaway: As someone who’s extroverted and happy to work with strangers and navigate the pre-prepped parts, I still learned good new techniques. However, I wouldn’t recommend the class overall. The biggest drawbacks were the number of pre-made elements, and the fact that the recipes rely on tools many people don’t have at home e.g. pasta machine, ravioli stamp, block chocolate to shave, gelatin sheets, etc. That said, the recipes provided do include some at home adaptations, like suggesting vanilla essence instead of vanilla paste.
