In this hands-on class, you’ll learn how to ferment almost any vegetable using flexible, inclusive, and waste-free techniques and adaptable recipes.
We’ll make vibrant vegan kimchi using often-overlooked parts of produce, like stems and leaves, turning what many discard into flavourful gold.
To finish, we’ll share a light meal made with our kimchi, showing that fermentation is not just preservation—it’s transformation.
