We’re Imbue Distillery, a small, independent distillery in Research, on the leafy edge of Melbourne’s Yarra Valley.We started Imbue in 2019 after many years working across food and hospitality, fuelled by a shared curiosity about flavour and a slightly dangerous habit of asking, “What would happen if we tried this?”That curiosity still drives what we do today. We make everything from gin, vodka and agave spirits to liqueurs and whisky, often using native, local and seasonal ingredients and experimenting with different grains, botanicals and casks along the way. We’ve never been particularly interested in making spirits just because that’s how they’ve always been made.Our Story Sessions grew from one of our favourite parts of running the distillery: talking to people about how and why we make what we make. Rather than a formal tour or classroom-style tasting, we invite you behind the scenes to explore the distillery, taste spirits along the way and hear the stories, experiments, successes and occasional happy accidents behind them.Between us, our team brings decades of experience across hospitality, food, fermentation and distilling. Our spirits have also picked up plenty of awards over the years, including multiple Gold Medals at the Melbourne Royal Australian International Spirits Awards - but we’re just as happy talking to someone tasting whisky for the first time as we are getting nerdy about botanicals, fermentation or cask finishes with a fellow spirits enthusiast.We believe good drinks are even better when you know the story behind them. Come curious, ask plenty of questions, and we’ll pour you something interesting.
