In this class, you will learn all about the unique rich flavours used in Mediterranean cooking from expert chef Tonya. Using fresh produce and a recipe, you will get hands-on recreating traditional dishes from Spain to Italy, to Greece, Turkey and the Middle East! There is a whole range of flavourful dishes for you to cook.

  • Mussels with garlic, anchovies and parsley
  • Butterflied lamb with rosemary, lemon, garlic and feta
  • Italian caponata
  • French Pipérade
  • Roasted eggplant with walnut and coriander salsa

You will learn new cooking skills, experience the sweet and sour flavours of the region, and then put them to use cooking your luncheon. Plus, you'll also get to sit down and eat all the food you've laboured over with a glass or two of wine!

Tonya's teaching style was easy to follow, but the kitchen space was a bit small for all the preparations happening at once. All in all a very enjoyable day. Sitting down to eat our food, at Tonya's beautiful table was a delightful finish.

I was very impressed with the format of the day beginning with a thorough insight into the food we were endeavouring to cook that day. A small class of six bonded well and with the wonderful Joan as Tonya’s assistant we navigated our way through the menu. Today theme was Mediterranean - Touch of Spice which was inspiring and delicious and as we prepared the food that we would later enjoy together, Tonya was a wealth of knowledge and gave many tips throughout the day. The dining experience was a delight and with a glass of wine and new friends made, I would highly recommend this cooking experience.

When pairs came to more difficult parts, Tonya would stop us all to discuss and watch. Im only a basic home cook, so I was a little intimidated at times with doing techniques I had never done before, but no disasters luckily. I did learn a lot and will be able to confidently cook what we made. The best part was sitting down at the end and enjoying the fruits of our labours - a most wonderful meal and glass of wine. Tonya provided all the recipes plus emailed us some other handouts.

From Tonya’s signature focaccia with caramelised onion and olives, to ricotta and feta fritters, to grilled mussels, a baked eggplant cannelloni/ lasagne dish. Dessert was equaling amazing with meringue roulade decorated with grapefruit segments, Turkish delight, pistachios and rose petals and almond shortbread. We were greeted with lemon syrup buttermilk cake and a tea/coffee to start off the day. It’s so pleasant to watch the sun shining over the Marina and the sparkling blue hues of the sea while sipping on a white or red and enjoying the fruits of our labour.

You will be inspired to race home and repeat the dishes you have learned in the day’s class. Tonya is Melbourne trained at Holmesglen, in Paris at Le Cordon Bleu and the Ritz Escoffier and in Burgundy at La Varenne l’Ecole de Cuisine. She has taken culinary tours to France in the Dordogne and Provence, plus she has visited regional cooking schools in the Dordogne, Normandy and in Tuscany, Italy. She regularly takes culinary tours to Marrakech, Morocco, where she perfects many of the Moroccan dishes she discovers there, cooked to perfection by her friend and chef colleague, Edwina Golombek, who owns a culinary, residential cooking school riad in the heart of Marrakesh. A visit and her pilgrim's walk along the Camino de Santiago de Compostela found Tonya in love with the history and culinary traditions of Spain, so she has added these experiences to her Spanish cuisine cooking classes as well.
Before training as a chef, Tonya was a librarian, information manager, library trainer and library consultant. Cooking on the Bay proudly owns an extensive library collection of over 3000 cookbooks and books related to food, cooking, France, Italy Morocco and the Mediterranean.
