Looking to add a little bit of spice into your life? Why not try out Cooking on the Bay's Spanish cooking class and learn how to make a traditional paella packed with authentic flavours!
In this class, you will be guided through the step-by-step process of creating some classic Spanish dishes, from tapas to a great paella with the flavourful 'secret' ingredient of a soffregit base. You'll learn some basic cooking techniques, then it's over to you, cooking hands-on, using market fresh produce to create delicious Spanish foods that you'll enjoy eating at the end of the class!
Cook a few pintxos, the famous bar tapas foods served in San Sebastien, where there's a wide variety of new recipes for you to try for yourself. Unleash your inner cook and learn how to make mouth-wateringly delicious dishes that will have your family and friends coming back for more! You'll get to enjoy the foods you've made with a glass of wine at the end of the experience and spend some time connecting with your friends and others alike.
Menus vary with the season and include dishes like:
  • Red and green gazpacho chilled soups
  • Ajo blanco, the Spanish white garlic and almond soup
  • Spanish marinated octopus pulpo
  • Tortillas, the famous potato omelette
  • Croquetas made with choux pastry
  • Tuna stuffed peppers and mushrooms
  • Paella mixta, with pork, chicken, chorizo, my 'Australian touch', mussels, calamari, served with saffron Aiöli on the side
  • Tarta de Santiago de Compostella, an almond flourless tart from Santiago de Compostella, originally made by the nuns
  • Crema catalana, the Spanish orange and cinnamon-infused crème brûlée style custard
Come to well-located St Kilda and experience this Spanish paella cooking class, and cook your paella in the huge paella pan, on the balcony, whilst overlooking the bay, weather permitting. Learn to cook food that will transport you over the seas to Spain, using a range of Spanish ingredients, saffron, pimenton, paprika, Manchego cheese and leave this class feeling confident in your new skills and inspired to create your own Spanish dishes at home!

Tonya is Melbourne trained at Holmesglen, in Paris at Le Cordon Bleu and the Ritz Escoffier and in Burgundy at La Varenne l’Ecole de Cuisine. She has taken culinary tours to France in the Dordogne and Provence, plus she has visited regional cooking schools in the Dordogne, Normandy and in Tuscany, Italy. She regularly takes culinary tours to Marrakech, Morocco, where she perfects many of the Moroccan dishes she discovers there, cooked to perfection by her friend and chef colleague, Edwina Golombek, who owns a culinary, residential cooking school riad in the heart of Marrakesh. A visit and her pilgrim's walk along the Camino de Santiago de Compostela found Tonya in love with the history and culinary traditions of Spain, so she has added these experiences to her Spanish cuisine cooking classes as well.
Before training as a chef, Tonya was a librarian, information manager, library trainer and library consultant. Cooking on the Bay proudly owns an extensive library collection of over 3000 cookbooks and books related to food, cooking, France, Italy Morocco and the Mediterranean.
