Want to learn how to make Portuguese food? Join this beginner-friendly class with Chef Tracey in Melbourne!
Here, you will learn that with an 850-kilometre-long coastline, Portuguese cuisine is heavily influenced by seafood from the Atlantic Ocean. Two classic dishes featuring seafood are in this class.
First, a dish Chef Tracey very much enjoyed in the small coastal town of Setubal last year: baby squid filled with spicy sausage, capsicum and onions. The second will bring together a slow-cooked pork shoulder finished with potatoes and briny clams.
We will pair these dishes with a winter salad of oranges with olives and a touch of chilli. And to round it off, we will prepare a traditional coffee-based dessert, Bolo De Bolacha.
Perfect for beginners, Chef Tracey will lead you through the dishes, discussing techniques and methods required to successfully recreate them at home. Even though the cooking classes are predominantly demonstration, you will be required to roll up your sleeves and assist along the way.

Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.
In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.
Now back in her old stamping ground of Brunswick, Tracey looks forward to sharing her love of good food through her cooking classes for keen home cooks, professionals, corporates, kids and teens.
