In my gluten-free Italian cooking class, you will be transported to the bustling streets of Rome as you learn how to create traditional Italian dishes from scratch. Imagine the satisfaction of making your own handmade gluten-free egg pasta and gnocchi, roast capsicum and tomato sauce, and Ligurian pesto.
My home kitchen is low gluten because I bake wheat bread for my family. All care is taken to prevent cross contamination and the kitchen and utensils are given a thorough cleaning after I have made their bread. Designated gluten free cutting boards are used for food preparation. I use Caputo Fioreglut gluten free flour to make the pasta. For the ultimate Italian gluten-free baking experience, Caputo Fioreglut is the gold standard. Made in Naples by the renowned Molino Caputo, this proprietary blend of gluten-free wheat starch, starches, and psyllium allows you to make authentic Neapolitan pizza bases, pasta, and rustic breads with traditional elasticity and texture. Unlike standard gluten-free mixes that rely purely on rice or corn, Caputo uses gluten-free wheat starch alongside maize starch, buckwheat flour, and psyllium seed fiber. This flour is considered safe for those with Celiac disease because the wheat starch has been rigorously processed and washed to remove all gluten proteins to meet strict regulatory standards. However, it is not suitable for individuals with a diagnosed wheat allergy.
Due to the constraints of my home kitchen, this class will be partly demonstration and partly hands-on.

If you're feeling nervous about your cooking skills, fear not! I will guide you through each step with patience and encouragement. This workshop is designed for beginners, so you'll feel supported throughout the entire activity, from chopping herbs to perfecting your pasta.
You will work with high-quality ingredients and traditional Italian recipes, allowing you to immerse yourself in the culture and flavours of Italy. By the end of the class, you'll feel confident and inspired to recreate these dishes in your own kitchen. The class runs for two hours, followed by lunch outside on our patio, where we will enjoy the fruits of our labour with fresh gluten-free focaccia to mop up the sauces. Hi, I’m Sandra. I’m a retired teacher who has been gluten-free for over 24 years. I want to share my experience with others, particularly the newly diagnosed.
I learnt to make macarons back in 2020 from a French pâtissière chief. I am not a qualified chef but I love baking macarons and have been running classes, in my home kitchen, for a few years. I only run two classes a month, including private bookings. I like the idea that you don’t need a commercial kitchen to make these beautiful treats. You will go away with all the skills to make beautiful macarons at home. I also provide support, through Instagram. So if you have any question after the class, you can still get help and advice.
In the future, I plan on creating classes on gluten-free cooking. I love cooking Italian and French food using gluten-free ingredients. The idea of cooking together and enjoying the fruits of our labour together is what I feel food is all about. I want to share this love with others through small group classes in my home kitchen.
