If you’ve ever felt intimidated by sourdough, this hands-on class is designed for you. In this workshop, you’ll learn how to make real sourdough bread from scratch in a clear, structured and approachable way, without stress or unnecessary complexity.
You’ll be guided step by step through the entire sourdough process, from understanding your starter to mixing, folding, shaping and baking. Sourdough can seem overwhelming at first, but once you understand the “why” behind each step, everything starts to make sense. You’ll leave this class feeling confident, informed and ready to bake at home.
This hands-on sourdough class is divided into two practical and easy-to-follow parts, so you can fully understand the process and build confidence.
Part one: You’ll be guided through the full mixing process step by step. I’ll explain the sourdough recipe in detail and walk you through my personal baking schedule—exactly how I make bread at home, from start to finish.
Part two: You’ll shape and bake a sourdough loaf, and we’ll feed the sourdough starter together for the first time, so you understand how to care for it properly.
Your teacher is a qualified baker with over 10 years of professional experience, originally from Italy and trained in some of Australia’s most respected bakeries, including Bourke Street Bakery, Sonoma and The Bread Social in Byron Bay. You’ll benefit from real industry knowledge, practical tips and proven methods (not just recipes).
This class is kept intentionally small, so you get plenty of one-on-one guidance. You’ll have the opportunity to ask questions, troubleshoot common problems and learn tips that most people don’t find online. All techniques are openly shared, with a strong focus on understanding structure, timing and dough behaviour.
By the end of the workshop, you’ll understand how sourdough really works, feel comfortable with the process, and be ready to continue baking confidently at home. Whether you’re a beginner or looking to improve your results, this class will give you a solid foundation you can build on for life.

I’ve been a baker for over 10 years, and bread has been a big part of my life for as long as I can remember. I started teaching sourdough just over a year ago, and I immediately fell in love with it. Teaching allows me to share everything I’ve learned without having to wake up in the middle of the night for bake shifts — and honestly, it’s much nicer this way! What I love most is seeing that “aha” moment when sourdough finally clicks for someone. Sourdough can feel overwhelming at first, but once you understand the structure behind it, it becomes approachable and enjoyable. I’m very open with my methods and happy to share all my processes, tips, and real-world experience.
I’m a qualified baker, and while I haven’t taught at colleges or large institutions, I prefer to keep my classes small and intimate. I could teach 100 people at once, but that’s not my style — I want to give each student enough time, attention, and confidence to succeed.
