Justine's class is pretty great. She prepares each attendee's dough beforehand so that we (10 of us) could practice the preparation techniques in the allotted time. Everyone got to finish their dough so that all that was left to do was bake it the following day. My loaf featured, still warm, as part of a dinner for friends - it is so tasty; no doubt contributed to by the 110 year-old sourdough starter we got to take home and continue with our baking destinies.
