The baking process consists of nine different stages. The stage shown in the image is an early step, performed after kneading, where we begin stretching the dough to develop the gluten network that will form the foundation for the bread.

Bulk fermentation

Bulk Fermentation

Between the kneading and handling stages, the dough is given a resting period, during which it ferments, increases in volume, and becomes airy and bubbly.

After the long process, the results are delicious, healthy, and nutritious.

In my workshops (which are held every Tuesday and Friday, with an additional weekend session once a month), you will learn the core principles of home bread baking, using tools and equipment found in almost every kitchen. You’ll be guided through the full process, including the stages, techniques, and key tips, so you can return home and start baking bread independently for yourself and your family.
The workshop is held in small groups to ensure an optimal learning experience with close, hands-on guidance, and at the end, you’ll take home all the bread you’ve made.
you can choose between 3 different workshops:

  • 5/5 from Merav Waldman, attended Sep 2026: I had the pleasure of taking an excellent sourdough bread baking workshop with Roy. I learned so many new things, and even had some of the things I thought I knew about baking, debunked! It was my first introduction to sourdough, and I completely fell in love with it and with the amazing variety of breads and baked goods I can make with it. Roy combines indepth explanations and demonstrations with practical guidance, advice and answers to all the questions needed to start baking independently at home. And of course, there’s nothing like the smell of freshly baked bread filling the house, and knowing exactly what goes into it! I enjoyed the workshop so much that I’m already planning to join Roy’s pizza making workshop as well. Highly recommended!
  • 5/5 from Elian Priel, attended Sep 2026: We had such a lovely morning at the baking workshop for mothers and daughters. It was my mom’s first time ever working with dough, and the results were amazing. Roy was incredibly patient, explaining each step so clearly, and he made us feel completely confident kneading and shaping. Beyond the beautiful things we got to bring home, it was the experience itself that was so special. Highly, highly recommended!
  • 5/5 from Hadas Goshen, attended Aug 2026: I had such a wonderful experience at Roy's sourdough workshop! Roy was incredibly knowledgeable, patient, and generous with his time and expertise. He explained each step clearly, shared plenty of helpful tips and practical insights, and made the whole process feel approachable and enjoyable, even for a beginner. What I especially appreciated was Roy’s enthusiasm and willingness to answer every question. The workshop was thorough, relaxed, hands-on, and genuinely inspiring. I left with not only a better understanding of sourdough, but also the confidence and motivation to keep baking at home. A fantastic workshop led by a warm, passionate, and highly skilled instructor. I would wholeheartedly recommend it to anyone interested in learning the art of sourdough!
  • 5/5 from Coco Cheng, attended Aug 2026: I really enjoyed the bakery workshop. During the class, we made three different types of bread and crackers. Roy gave us a warm welcome and had thoughtfully prepared everything we needed, including aprons, all neatly marked with his name. We were also provided with handouts containing the recipes for all three breads. What made Roy’s workshop truly special, however, was his philosophy of “being a baker, not just a recipe follower.” He didn’t simply tell us what ingredients to use or how long each step should take—he explained why. He helped us understand the science and reasoning behind the baking process, and even showed us a video about the origins and development of bread. To be honest, bread is not a big part of my cultural background, and I had never baked before. But Roy made the whole experience so interesting and engaging. It felt like much more than just a baking class—it was also a way of sharing culture and history. The workshop gave me a new appreciation and respect for bread, and made me genuinely curious to learn more about it. At the end of the class, I took home the bread and crackers we had made and shared them with my children. I told them about my experience of making bread, and I think it gave them a deeper understanding and appreciation of the food they were holding and eating. That, to me, was one of the most meaningful parts of the whole experience.
  • 5/5 from Michelle Joosse, attended Aug 2026: The class was very informative. A great mix of practical and theory behind making the best loaves of bread. I feel a lot more confident in making my own bread now.
  • 5/5 from Esther Sylvester, attended Aug 2026: Writing As someone who loves baking all things sweet and standard bread but has always felt intimidated by sourdough, Roy’s workshop was the perfect introduction. I left feeling confident, informed, and excited to begin my sourdough journey. Roy was incredibly knowledgeable, patient, and thorough, answering every question in a way that was easy to understand. I loved how meticulously he had all the ingredients and tools prepared for each student, with worksheets and outlines to take home. The atmosphere was welcoming and personalised, with plenty of encouragement and constructive feedback. It was lighthearted while still emphasising the importance of accuracy, timing, weighing, and technique. He has continued to support me after the workshop, answering my questions as I tried it at home for myself. Highly recommend!
  • 5/5 from Ofira Walker, attended Aug 2026: I did the Baking for Health workshop and had a great time. I learnt the techniques for making different types of sourdough bread, as well as the theory behind the sourdough making process. Roy created such a welcoming atmosphere and was able to make the entire course so detailed and understandable to a beginner. I am very eager to take the Home Made Sourdough Pizza course!

I enrolled simply for the enjoyment of the experience, and I could not have made a better choice. From the moment my two friends and I arrived, everything was exceptional. There wasn't a single "but"—it was simply a perfect experience from beginning to end. Your beautiful premises, the impeccably equipped kitchen, and the thoughtful attention to every detail created an atmosphere that was both welcoming and inspiring. Every stage of the bread-making process was carefully prepared, making the day enjoyable and easy to follow. The delicious breakfast you prepared for us, featuring bread you had baked in advance, was a wonderful way to start the day and reflected the generosity and care you bring to your guests. Your knowledge is extensive, and your passion for baking is evident in everything you do. You are a true perfectionist, yet you teach with warmth, patience, and genuine enthusiasm, making everyone feel comfortable and encouraged. Thank you for sharing your expertise and for creating such a memorable day. Whether or not I ever bake another loaf at home, I will always remember this experience with great pleasure. Roy was knowledgeable, patient, and explained each step clearly, making the process easy to follow. We learned how to make sourdough bread, delicious biscuits, and fluffy focaccia, with plenty of hands-on practice throughout the session. Everything was well organized, and I left feeling confident to try baking at home. The breads and biscuits tasted amazing, and it was such a fun and rewarding experience. I highly recommend this class to anyone interested in learning the art of baking with sourdough.

  • 5/5 from Lyndy Wallis, attended Jul 2026: I had such a wonderful day at Roy's sourdough workshop and honestly couldn't recommend it more highly. From the moment I arrived, I felt so welcome. The small group size made such a difference, as everyone had plenty of one-on-one time with Roy and could ask as many questions as they liked. Roy is an incredible teacher. He's so knowledgeable, patient, and encouraging, and he has a real gift for explaining the sourdough process in a way that makes it easy to understand. The workshop was very hands-on, so I left feeling confident that I could go home and bake my own sourdough successfully. The venue was absolutely beautiful and created such a relaxed, enjoyable atmosphere. We were also treated to a delicious brunch, which was a lovely touch and made the whole experience feel even more special. One of the things I appreciated most was that the support doesn't end when the workshop finishes. Knowing that Roy is happy to provide ongoing advice and answer questions as we continue baking at home is invaluable. I came away inspired, full of confidence, and excited to keep baking. If you've ever thought about learning to make sourdough, don't hesitate—this workshop is worth every minute. Thank you, Roy, for such a memorable and enjoyable experience!
  • 5/5 from Sarah McDonald, attended Jun 2026: I absolutely loved this course with Roy. • 5/5 from Merna Roshdy, attended Jun 2026: We would like to thank Mr. Roy for allowing us to spend such a special time. Even though I had never baked bread before, the class was enjoyable and comfortable from start to finish because he explained everything in an easy-to-understand and kind manner. I was deeply moved when I saw the finished sourdough bread. Moreover, The combination of bread, crackers, and coffee prepared for us was the best. As someone who was looking for healthy bread, this was a great opportunity to try making it myself through Mr. Roy's professional instruction.
  • 5/5 from Tommy Law, attended May 2026: We had a great time, very informative and fun. Roy was very accommodating and knowledgeable. Its a well set up workshop with a well run program. We made 4 loaves of bread and some crackers to take home, and sat down and enjoyed some bread and crackers with crudités while we waited between baking times. I started my own sourdough journey 3 weeks ago, and being so new, Roy answered all of my questions and everything now makes sense! My partner who came along to keep me company really enjoyed himself to his surprise. We highly recommend.

Baking For Health
Baking For Health

My bread baking journey began in 2007, when I first discovered the world of nutrition and human health. That was a pivotal moment for me - I realised how deeply the food we eat impacts both our body and mind, and it sparked a passion that has shaped my path ever since.
I went on to earn a degree in Clinical Nutrition with distinction and spent years helping people improve their wellbeing through practical and sustainable lifestyle changes. This foundation strongly influences the way I approach bread - focusing on quality ingredients, simplicity, and mindful processes.
Interestingly, I didn’t bake at all before studying bread making - I was purely into cooking. I actually didn’t enjoy baking, mainly because of the precision and structure it requires, which felt very different from the freedom of cooking. But once I was introduced to the world of bread baking through professional training, something completely clicked - and since then, I haven’t been able to stop.
I completed two professional courses in home-style bread baking over six months at a culinary school, and after baking hundreds of loaves and refining my techniques, I knew I was ready to start teaching and share this passion with others.
Over the past year, I’ve run dozens of workshops and taught over a hundred students, helping home bakers gain confidence and consistency in their baking. I specialise in small, hands-on workshops (up to 4 participants, with the option to extend to 6), which allows me to give each participant personal attention and real, practical guidance.
What many people don’t realise is that great bread doesn’t have to be complicated. Once you understand a few key principles, baking becomes intuitive, enjoyable, and incredibly rewarding - and that’s exactly what I love helping people discover.
For me, teaching is about creating that “aha” moment - when something that once felt intimidating suddenly becomes simple and achievable. Seeing people pull their own beautiful loaf out of the oven for the first time never gets old.
Bread baking, for me, is more than just a skill - it’s a way to slow down, reconnect with real food, and create something meaningful to share with the people you care about.
I’d love for you to join me on this journey and discover the joy of baking your own beautiful bread at home
