7 hours Location Abbotsford Class size 1 to 15 guests   $467 - $837 ($467 for For 1 Person; $837 for For 2 People) (Afterpay available)

Finish your dinner party on a high note. In this full-day workshop, you'll learn the core techniques behind tarts, choux, chocolate and custards and why each step matters.
You'll build a pastry display of lemon tarts, chocolate éclairs and profiteroles. Then you'll compose a restaurant-style plated dessert from simple parts: crumble, fruit coulis and a crisp tuile. The day ends with everyone's work set out together on a dessert table.
On the menu:
  • Lemon tart with sweet shortcrust (pâte sucrée)
  • Vanilla crème pâtissière – the base for dozens of desserts
  • Chocolate éclairs and profiteroles from one batch of choux
  • Plated dessert with crumble, coulis and tuile
  • Dark chocolate mousse and ganache – the ganache also glazes your éclairs
  • Pandan crème caramel (bánh flan) – a silky baked custard with a Vietnamese twist
Pastry needs resting time, so your chef will have rested dough ready when you need it. You'll still make your own from scratch to take home. Most of these can be made a day ahead, so dessert is ready before your guests arrive.
What you'll learn:
  • Mix, rest, roll and line a tart tin with sweet shortcrust
  • Blind bake for a crisp, even base
  • Cook a smooth crème pâtissière and lemon curd
  • Make choux, pipe it evenly and bake it hollow and crisp
  • Glaze, fill and finish pastries neatly
  • Plate a dessert with contrast in texture, colour and flavour
  • Melt chocolate into a glossy ganache and fold an airy mousse
  • Bake a silky custard and cook a clean caramel
What to expect:
  • Full-day, hands-on class
  • Your own bench, with step-by-step guidance from an expert pastry chef
  • Small group of up to 15 for plenty of one-on-one help
  • Premium Victorian butter, dairy, eggs and fruit
  • Enjoy the dessert table together with tea, coffee or a glass of wine
  • Take home your pastries
  • Recipes to take home so you can bake it all again

ABOUT US
Otao kitchen is a cooking school and event space with a mission for people to come together to cook, connect, celebrate. We believe cooking and eating should be an experience, not just a meal. We created Otao kitchen as an extension of our passions to cook, share and inspire.
EXPERT IN COOKING CLASSES
Otao kitchen was launched in Melbourne, Australia in July 2014, with the goal of celebrating the rich and varied cooking experiences of Melbourne’s immigrant multicultural communities. Its founder, Chef Ha Nguyen, originally from Hanoi shares his passion for food, instructing customers in the exotic diaspora of Asian and around the world cuisine.
WHAT WE DO BEST?
Today our guests can get inspired by cooking with our local and international chefs, listen to their cooking and travel experiences in Asia and around the world and bring some cooking and cultural tips and tricks home. With the nods at the diversity of communities within Melbourne, Otao kitchen features an array of global food experiences from Indian to Japan to Mexico and more.
In 2020 with the challenge of global Covid 19 pandemic, we set out to capture the curriculum of our hands-cooking classes and deliver it online to home cooks in Australia and across the world to guide you to cooking success and better health.
