In this workshop on the Central Coast, you'll learn how to make strawberry daifuku and enjoy a guided tea tasting with your handmade Japanese sweets.
Daifukumochi, or daifuku, is a traditional Japanese sweet eaten at events, festivals and also at home! It's not overly sweet and is gluten-free. It is usually a strawberry covered in sweetened red azuki bean paste, wrapped in a soft mochi shell, but you can also have it with mango instead of strawberry, or anything you'd like. In this class, we will be making strawberry daifuku.
As daifuku is often served with tea, we will have a special guest joining us. Mariko will help us explore Japanese teas! Mariko is from a multi-generation tea business in Tokyo - Tokyo Handa-en - and a certified Japanese Tea Instructor.
You will learn the basics of Japanese tea (its types, production methods and unique characteristics), enjoy a guided tasting of three sencha teas with different steaming levels, as well as hōjicha and genmaicha and get hands-on instruction on how to brew tea using a traditional kyusu teapot.
At the end, you'll enjoy your favourite tea to pair with the sweets you made!
Come and immerse yourself in Japanese sweets and tea with two Japanese instructors! All materials and tools will be provided, and you'll leave with your 6 strawberry daifuku, plus a packet of your favourite tea from the tea tasting. 100% vegan and gluten-free.

Tomoko is a Japanese calligraphy artist, a miso maker and a language teacher based around Sydney and the Central Coast. Tomoko was born and grew up in Japan, and she have been living in Australia for about 6 years. Tomoko loves the beaches and natural landscapes here!
