Australian desserts queen, Emelia Jackson is coming to Otao Kitchen for a one-night-only experience dedicated to the buttery, crisp, cloud-like magic of choux pastry.
Whether you’ve attempted éclairs at home or always wondered how to get that perfect bake and fill, this is your chance to master the technique, guided step-by-step by one of Australia’s finest patissiers.
Expect the ultimate indulgence, with a side of insider tips, piping bags, and buttery pastry bliss.
What you'll learn and experience:

  • Chocolate Éclairs - Crisp choux shells filled with silky patisserie cream, finished with a glossy chocolate glaze – elegant, rich and irresistible.
  • Craqueline Choux Pastry - Master the art of golden choux with a crunchy craqueline top - a show-stopping twist on a classic.
  • Choux Buns with Chantilly Cream & Berries - Light, airy buns piped with luscious Chantilly cream and finished with fresh berries.
On the day:
  • Three hour baking class with guided demonstrations and hands-on preparation
  • Welcome drink and introduction to the dishes
  • Cook a full menu with guidance from Emelia and our team
  • Enjoy your bakes and mingle with fellow food lovers
  • Get to know Emelia, ask questions, and get your copy of her book signed
  • Please arrive 10 minutes early to settle in - class starts promptly at 6:30PM.
Note:
  • Rescheduling: If you need to reschedule more than 14 days before the event, there’s no charge to change to a new class date. For subsequent date changes, a $49pp fee will apply. If rescheduling within 14 days of the event, we can only accommodate changes due to illness, provided a medical certificate is supplied. The $49pp admin fee will still apply.
  • No Refunds or Rescheduling: Refunds or reschedules will not be available if: a) you fail to arrive on time; b) you voluntarily leave after the class has started and c) you need to leave the event due to illness, injury, or bereavement. We highly recommend securing travel and medical insurance.
  • Unable to Attend? If you are unwell, we encourage you to send someone in your place. Attendees who are not unwell are still expected to attend.
  • Lateness: Please arrive 10 minutes before the scheduled start time. Unfortunately, we cannot accommodate or refund for late arrivals, even if you notify us in advance. The instructor will start the class on time and won’t be able to repeat any health and safety briefings or demonstrations.

EXPERT IN COOKING CLASSES
Otao kitchen was launched in Melbourne, Australia in July 2014, with the goal of celebrating the rich and varied cooking experiences of Melbourne’s immigrant multicultural communities. Its founder, Chef Ha Nguyen, originally from Hanoi shares his passion for food, instructing customers in the exotic diaspora of Asian and around the world cuisine.

Today our guests can get inspired by cooking with our local and international chefs, listen to their cooking and travel experiences in Asia and around the world and bring some cooking and cultural tips and tricks home. With the nods at the diversity of communities within Melbourne, Otao kitchen features an array of global food experiences from Indian to Japan to Mexico and more.
In 2020 with the challenge of global Covid 19 pandemic, we set out to capture the curriculum of our hands-cooking classes and deliver it online to home cooks in Australia and across the world to guide you to cooking success and better health.
