Inspired by chakabuki, a traditional Japanese tea-tasting game enjoyed by samurai and aristocrats between the late Kamakura period (1185–1333) and the middle of the Muromachi period (1338–1573), this experience reimagines the ritual through a modern lens using matcha.
While chakabuki was traditionally practised with brewed tea such as sencha, we apply the same principles of sensory focus and discernment to matcha chosen for contrast and expression, offering a contemporary and immersive interpretation.
You’ll explore Japanese matcha through its cultural roots, production process and cultivar differences while learning how to assess quality, freshness and value with confidence.
You’ll taste three matcha twice: first as usucha (thin tea), then blind as lattes, revealing how preparation and milk transform character and expression.
The session ends with hands-on whisking of a matcha drink and a matcha dessert of the day.
