Join us for an engaging and transformative Shokuiku class, a Japanese-originated food education philosophy that emphasises cultivating a correct understanding of food and healthy eating habits through dietary education. This is true health education, preventing illness from its source.
Unlike traditional cooking classes that focus on "how to make a delicious meal" and culinary techniques, our Shokuiku class centres on whether children truly understand the essence of food and how to eat healthily. Knowing how to cook doesn't always mean knowing how to eat right; a person who truly understands food will possess lifelong health.
Children will explore fundamental questions like: Why are fruits better for the gut than candy, even if both are sweet? How does breakfast impact a day's learning and mood? Why is gut microbiota more important than you imagine? We aim to awaken a deep connection between children and "real food" by experiencing the true appearance of vegetables and fruits and understanding why processed foods are not real foods. Through a "five senses" approach – seeing colours, touching textures, smelling aromas, hearing cooking sounds, and tasting natural flavours – children will learn to appreciate food fully.
The "Smart Eating" philosophy teaches children to gain power from ingredients. They will learn which foods suit them, the nutritional characteristics of natural ingredients, how to retain nutrients during cooking, and the "combination logic" of nutrition – how natural ingredients need good partners to be effectively used by the body. We also foster a deep emotional connection by helping children understand that "food has life". From seed to growth, food is nurtured with care, much like children themselves. This understanding teaches them to cherish food as a form of respect for nature, others, and themselves, recognising that "not wasting" means valuing a life that was loved and now nourishes them.
We exclusively provide the most natural and nutritious (organic) ingredients for our students, including organic or sustainably farmed vegetables and fruits, organic free-range meats and dairy, low-mercury wild-caught seafood, premium free-range eggs without antibiotics or hormones, and organic nuts, seeds, flour, and staple foods.
Duration: Each session runs for 3 hours, from 10:00AM to 1:00PM. Choose one session or multiple sessions.
Menu Content (Specific Dishes):
  • Sept 22nd: Falafel (chickpea patties) stuffed with wild-salmon salad
  • Sept 23rd: Curried beef puff-pastry pie
  • Sept 24th: Japanese beef & vegetable ramen (sesame-miso bone broth)
  • Sept 29th: Pan-seared lamb with hummus (chickpea purée)
  • Sept 30th: High-protein Greek-yoghurt flatbread with ground-beef filling
  • Oct 1st: Chicken lasagna made with Italian sourdough sheets

Deep Understanding of Food & Nutrition: Comprehensive knowledge on gut health, the importance of breakfast, staying focused at school, the "80% full" rule, pre/post-exercise nutrition, essential nutrients, dangers of sugar, processed foods, and fast food, creating natural sweetness with fruits, understanding sugar substitutes, and the benefits of fermented foods for immunity.
Practical Cooking & Preparation Skills: Learn to use scales, calculate portions, identify ingredients, safely cut food with child-safe blunt knives, control ingredient quantities to avoid waste, master nutritional cooking tips, salad pairing techniques, recognise and apply spices and natural seasonings, handle/season/cook meats, use/cook cheese, prepare vegetables and fruits, make healthy pastries, and properly store ingredients and leftovers.
Healthy Eating Habits for Drinks & Snacks: Understand the relationship between water and the brain, how to replenish electrolytes, benefits of fermented matcha, making healthy smoothies, proper milk consumption, making plant-based milk at home, and the harm of sugary drinks. Also, learn about using healthy snacks for energy, optimal snack times, snacks and exercise, portion control, distinguishing hunger from boredom, and the dangers of packaged snacks.
Hands-on Culinary Experience: Engage in every step from preparing tools and cutting ingredients in pairs (using induction cooktops for cooking, with staff handling ovens for safety), to cooking, cleaning up, and enjoying their self-made lunch.

Complimentary Healthy Drinks: No sugary drinks will be provided; all beverages are designed to teach children how to drink water correctly and healthily.
Complimentary Healthy Snacks: All snacks are homemade by Long Long (the instructor) and are sugar-free and healthy, with no processed foods containing added sugar.
Parental Engagement: On the last day of each course, parents are invited to the classroom to taste the lunch their children have personally prepared.
Knowledge required
No prior cooking experience is necessary; this class is designed for children aged 6 and above. We will teach them safe cooking practices and fundamental food knowledge from scratch.
What to bring
We’ll actually be making extra food during class, so the kids can take some home to share with their parents — a lunchbox will definitely come in handy for that. If children prefer, they’re welcome to bring their own water bottle.
And don’t worry at all if you forget the water bottle — not a problem!
One more small thing: we don’t wear shoes inside the classroom, so if it’s convenient, feel free to bring a pair of slippers. Thick socks are totally fine too — the floor is timber and we’ll have the heater on.

FAQ

What measures are taken for food allergies?
We take food allergies very seriously. The menu will be finely adjusted based on the physical conditions of the participating children. If even one child has an allergy, that day's specific allergen will be removed from the course and replaced with a safer alternative.
How do you ensure safety during eating?
During cooking and mealtime, children will be instructed to eat in small, safe bites and quietly to prevent choking or gagging. We also ensure food is cooled to a warm, safe temperature before consumption.
What safety precautions are in place in the kitchen?
We use children's blunt knives and separate bamboo cutting boards for raw and cooked foods. Manual choppers are used for pungent ingredients like onions and garlic to prevent eye irritation. Cooking is done on Green Pan ceramic induction cooktops to avoid harmful coatings and ensure safe operation. All baking items are placed into and taken out of the oven exclusively by our instructor (Long Long), ensuring children do not touch open flames or the oven directly.
How do you prevent foodborne illnesses?
We maintain a strict habit of handwashing throughout the operational steps, especially before and after touching meat.
Can parents participate or observe?
On the last day of each course, parents are invited to the classroom to taste the lunch their children have personally prepared. While waiting for parents, children can choose to read or play freely.
