Intensive Puff Pastry Making Class

Learn the technique, create classic French pastries, and leave ready to make them again at home

8 hours Location Maroubra Class size 1 to 6 guests   $450 - $495 ($495 per guest when you book for 1 guest, $450/guest for 2+ guests)

Spend a full day immersed in the art of French puff pastry in a professional pastry kitchen.
This hands-on intensive is designed for beginners and intermediate bakers who want to go beyond simply following a recipe and really understand how puff pastry works.
Throughout the day, you’ll learn two different methods of puff pastry: classic puff pastry and reverse (inverse) puff pastry. You’ll discover the differences between the two techniques, how they are laminated, and how each method can be used to create beautiful French pastries.
You’ll make your own puff pastry from scratch, learning how to prepare the dough and butter, laminate, fold, rest, and control temperature to achieve beautiful, even layers.
While your own dough is resting, you’ll work with puff pastry prepared in advance so we can make the most of the day and explore a variety of classic French pastries.
Together, we’ll create a selection that may include:
  • Millefeuille with homemade crème pâtissière
  • Apple turnovers
  • Palmiers
  • Fruit pastries
  • Galette des Rois with almond cream
Throughout the day, we’ll cover rolling, shaping, filling, baking, caramelisation, and finishing techniques, as well as understanding why each stage of the process matters.
Most importantly, this class isn't just about what you make on the day. You'll use your own dough during the training and take puff pastry you've made yourself home with you, so you can continue practising and recreate what you've learned in your own kitchen.
You'll leave with a generous selection of pastries, your own puff pastry dough, and, most importantly, the knowledge and confidence to make both classic and reverse puff pastry again.
Learn it here. Make it again at home. This is a full-day, small-group intensive with plenty of hands-on practice and individual guidance.

  • 5/5 from May Zin Htet, attended Oct 2026: As someone who works in the hospitality industry, I’ve always wanted to deepen my understanding of the fundamentals of pastry, especially puff pastry. I attended the puff pastry class today, and it was such a wonderful learning experience! We explored not only traditional puff pastry but also reverse puff pastry, along with the techniques and some theories behind them. I really appreciated that the class focused on understanding why we do certain things, why we use certain flour and so on. Chef Joel was incredibly friendly, patient and knowledgeable. It was also lovely to find out that I was the first person to attend this class! Everything in the photos was made and hand-rolled by me during the session, and I even got to bring home so many delicious pastries! I’m genuinely glad I decided to give this class a try. Whether you’re working in the industry or simply passionate about baking, I would highly recommend it. There’s always something new to learn Thank you, Chef Joel, for such an enjoyable and valuable experience!
