Over two hours, you will learn how to pipe chocolate correctly and write messages on chocolate using both white and dark chocolate. Guided by our head pastry chef, founder and owner of Sydney-based bespoke confectionery, The-brownie, you'll have fun creating chocolate garnishes to adorn chocolate desserts, cakes and brownies. You will also be taught how to make a chocolate writing pen, specific chocolate writing techniques, and how to create a chocolate plaque using transfer sheets.
Pre-order one of our take-home chocolate boxes at checkout, and we will have it ready for you to collect on the day of your class. Kit includes: 8 sheets of transfer sheets, 200g white chocolate, 200g dark chocolate and gold dust.

Starting my career straight out of school, culinary/pastry has always been my passion. Since leaving hotels and bakeries in 2023 after 19 long years, I decided to start teaching my passion, which is pastry. The kitchen, being my happy place, is now a place for me to pass on my knowledge to fellow enthusiasts of the culinary/pastry world. With a wealth of knowledge behind me, I know that I can continue to follow my passion and create truly unique class experiences at the-brownie.
