Simon Sandall is the chef-owner of the much-loved Boronia Kitchen in Gladesville. A master of flavour, he'll teach you the special creative flourishes that can take your meals from mundane to magical.
Simon’s extensive culinary experience began more than 30 years ago in London, where he worked in some of the city’s most high-profile restaurants. After moving to Australia, he held the position of head chef of ARIA Sydney and Executive Chef across the entire Morsul Group for 10 years.
With a passion for fresh produce, seasonal cooking and creating meals for the community of Gladesville/Hunters Hill, where he is a long-term local, Simon is also the author of "Boronia Kitchen: The Cookbook", which he self-published.
In this hands-on cooking class, Simon is going to teach you how to be a Chef at Home.
Simon will be sharing his chef's tips on opening oysters, slicing sashimi and cooking fresh prawns.
You'll also learn to put together five dressings that you'll have on repeat:
  • Recipe '222' - Simon's secret sauce
  • Ponzu
  • Marie Rose
  • Chilli kombu
  • Mignonette
Plus, you'll make a warm and comforting (but rather beautiful) Murray cod and scallop pie.
Please note
  • Minimum age 12. Children 15 and under must be accompanied by an adult
  • You will be cooking at a shared workstation in a group of 3 or more (maximum 6 per bench). If you have a group of 7 or more, please contact Sydney Seafood School to discuss your options.
  • We make every effort to ensure that the class and the recipes proceed as advertised. However, occasionally we may need to alter recipes, ingredients or class format due to the availability of produce or other circumstances.

  • It's also a good idea to bring your own container in case there are leftovers to take home. (We’re on a mission to eliminate single-use plastics wherever we can!)

The venue is a short walk from both the Glebe and Wentworth Park stops on the Light rail's Dulwich Hill line. Parking is available at basement level in the new Sydney Fish Market. Signposted rates apply.
