Italian Pizza at Home: Sourdough, Biga and More

Join our hands-on Sydney workshop and discover the secrets of incredible homemade pizza in your own oven!

2.5 hours Class size 1 to 6 guests

  $150 (Afterpay available)

What if you could make exceptional Italian pizza in your own kitchen, with a beautifully baked crust, a light and flavourful dough, and toppings that bring everything together?
Join Roy from Baking for Health for a hands-on pizza-making workshop that goes beyond recipes. Discover the science and techniques behind great pizza dough, explore different fermentation methods, and learn how to achieve delicious results in a regular home oven - without relying on a professional pizza oven.
Whether you're passionate about Italian food or simply want to take your homemade pizza to the next level, you'll leave with practical skills, fresh inspiration, and dough ready for your next pizza night.
What you'll learn and make
1) The perfect pizza sauce - learn how to prepare a delicious pizza sauce that complements the dough and brings your toppings to life.
2) Biga pizza dough - make it today, enjoy it tomorrow - prepare your own pizza dough using biga, a traditional Italian pre-ferment that develops flavour and texture. Along the way, learn the principles of dough mixing and kneading, fermentation, and proofing. Take your dough home to use the following day or freeze it for a future pizza night.
3) Sourdough pizza - flavour, technique and texture - working with sourdough pizza dough prepared in advance, you'll learn how to stretch and shape your pizza in the Neapolitan style, explore a generous selection of toppings, and master the key steps for baking pizza in a conventional home oven.
4) Three approaches to pizza dough - we'll also explore two other popular methods: direct dough, made with commercial yeast, and poolish, a pre-ferment that helps develop flavour and texture. Understand what makes each method different and how to choose the right approach for your next homemade pizza.
Time to eat!
At the end of the workshop, we'll sit down together and enjoy the pizzas we've made, accompanied by a fresh Italian salad. There's nothing quite like tasting a pizza you've made yourself, and if there's any left, you're welcome to pack it up and take it home!

My bread baking journey began in 2007, when I first discovered the world of nutrition and human health. That was a pivotal moment for me - I realised how deeply the food we eat impacts both our body and mind, and it sparked a passion that has shaped my path ever since.
I went on to earn a degree in Clinical Nutrition with distinction and spent years helping people improve their wellbeing through practical and sustainable lifestyle changes. This foundation strongly influences the way I approach bread - focusing on quality ingredients, simplicity, and mindful processes.
Interestingly, I didn’t bake at all before studying bread making - I was purely into cooking. I actually didn’t enjoy baking, mainly because of the precision and structure it requires, which felt very different from the freedom of cooking. But once I was introduced to the world of bread baking through professional training, something completely clicked - and since then, I haven’t been able to stop.
I completed two professional courses in home-style bread baking over six months at a culinary school, and after baking hundreds of loaves and refining my techniques, I knew I was ready to start teaching and share this passion with others.
Over the past year, I’ve run dozens of workshops and taught over a hundred students, helping home bakers gain confidence and consistency in their baking. I specialise in small, hands-on workshops (up to 4 participants, with the option to extend to 6), which allows me to give each participant personal attention and real, practical guidance.
What many people don’t realise is that great bread doesn’t have to be complicated. Once you understand a few key principles, baking becomes intuitive, enjoyable, and incredibly rewarding - and that’s exactly what I love helping people discover.
For me, teaching is about creating that “aha” moment - when something that once felt intimidating suddenly becomes simple and achievable. Seeing people pull their own beautiful loaf out of the oven for the first time never gets old.
Bread baking, for me, is more than just a skill - it’s a way to slow down, reconnect with real food, and create something meaningful to share with the people you care about.
I’d love for you to join me on this journey and discover the joy of baking your own beautiful bread at home
