In this class, you will learn the basic step by step process of making your own tofu by an expert cook. You will begin with a brief introduction to the history behind Japanese Goma tofu, a pannacotta-like sesame custard that is commonly eaten in Shojin Ryori (Buddhist culture). You will learn some staple cooking techniques and get hands-on grinding your own sesame seeds with traditional Suribachi and Surikogi, the Japanese mortar and pestle. The best part? Once the class is finished, you'll get to sit down and enjoy your own homemade tofu with some germinated organic brown rice, home fermented miso soup, homemade pickles and simple organically grown vegetables. What could be better!

Kathryn welcomed me into her home like an old friend. She is sensitive and cheerful, and her home lovely and peaceful.

I think I had a feeling about it before going in but was pleasantly surprised to find out that Kathryn would be guiding me to do things the hard wayworking the raw ingredients by hand, putting in the labour to build things from the bottom up with no short cuts - a genuine attitude and respect for the process.

The goma tofu felt minimal and full of vitality. It is 3 ingredients (one being spring water) worked into a lovely delicious dish.

We used an authentic grinding bowl and stick made of sansho wood, a pleasure to handle, and I stopped caring about time whilst slowly and patiently grinding away.

I learned, as described, how to make a simple, beautiful dish, but also found a touch of spirit in the process.
