Croquembouche won't have any secrets from you! In this hands-on baking class, you will learn how to make a Croquembouche and take your edible masterpiece home with you!

Pick up the tips needed to create the famous french celebration cake from A to Z, under the supervision and teaching of Joel Barda your pastry chef.

What you'll learn:

  • Learn to make a choux pastry: panada, incorporating the right amount of eggs to get proper consistency, pipe profiteroles and bake.
  • Make a vanilla pastry cream to fill up profiteroles with
  • Make caramel
build the croquembouche to the industry standard
  • Finish with spun sugar and other decorations
  • take home and find something to celebrate along with a glass of bubbly

I am originally from France and have been a pastry chef for 25 years. For the past 14 years I have been living in Sydney.
From 2010 to 2015 I was a teacher at the renowned culinary school “Le Cordon Bleu” in Ryde, and taught patisserie demonstrations and private classes. In 2012 I started my own business, Patisserie le Marais in Bondi and have since moved it to Maroubra. My favourite things to teach are croissants, Danish pastries and puff pastry products. I really love these products because you can do so so much with them.
