Meet Kimberley Chocolates

Meet Kimberley Chocolates

By Jana Lepojevic

Joseph Atallah forayed into the world of chocolate making workshops in 2003 after running a chocolate class for the Sydney Weekender and realising there was a real need for chocolate education and a demand for workshops. The focus? Fun, laughter and, of course, good quality chocolate.

With a background in organic chemistry and food science, Joseph began crafting experimental chocolates using unique Australian flavours that later won awards and gained media attention. Thanks to his organic chemistry degree and years of experience formulating perfume for Avon, Joseph also had the skills to add perfume making to his repertoire. Eager to share his expertise, Joseph set out to make luxury accessible and fun through hands-on chocolate and perfume making workshops.

Stop by Joseph’s recently restored, light-filled space in Lilyfield and get ready to indulge all your senses, learn something new and share some laughs. Each class will start with a bit of history before getting hands-on practice crafting your decadent goodies. Finish up with two bottles of handmade perfume or around 24 chocolates to take home and share with others (or enjoy all to yourself—we won’t judge!).

My top tip for beginners is…

“Have fun and just enjoy the chocolates!”

A close up of the chocolate making process

The most heartwarming student moment I’ve ever had is…

“I ran a chocolate class for a group of young people with Muscular Dystrophy. It was the most fulfilling and humbling time I’ve ever had.”

The biggest transformations I see are…

“People come to my class and freely admit that they have never smelled a perfume. While working with them and exploring unusual fragrances together, they always have a wonderful smile on their face because it’s their first time intentionally smelling perfume.”

Working with chocolate will help you…

“Destress and enjoy the tactile feeling of working with chocolate.”

Perfume making should be your next hobby…

“Because it’s never boring and there are always new fragrances to explore and mix.”
