Join this spice blending and cooking class in Sydney with Chef Ashraf Saleh!
Under the expert guidance of the Spice Master, you will get your hands dirty creating a spice blend for your meals and season the proteins so they are ready to cook. The menu includes a spiced chicken with pita bread as well as Turkish manti, which is a special occasion savoury dumpling filled with seasoned meat.
The chef will then take your prepared meals and cook them for you in the Coya restaurant kitchen. You can then eat the meal you prepared in the restaurant to cap off your spice journey.
By the end of the class, you will have crafted your unique spice blend to take home, along with newfound confidence and inspiration to experiment in your kitchen. Unleash your inner spice maestro with Chef Ashraf Saleh!

Chef Ashraf Saleh grew up in a Middle Eastern family eating food cooked by his mother and grandmother. From an early age he learnt just how exciting the flavours and dishes of his own heritage could be, using herbs and spices in cooking to create interesting flavours, and learning to observe, smell and taste the food along the way. Ashraf Saleh wants us all to appreciate what he grew up understanding - that herbs and spices enhance the flavour, colour and fragrance of food, and just a bit of spice or some fresh herbs added before serving can transform everyday ingredients into an appetising and aromatic meal.
After many years spent working around the world as a chef, Ashraf Saleh opened COYA restaurant in Sydney in 2016, which presents simple, modern Australian cuisine with a Middle-Eastern twist, exploring unique, interesting flavours and spices in a relaxing and warm atmosphere. In 2019
Ashraf Saleh published his first cookbook “COYA French Middle Eastern Cuisine”, and most recently published ” Ash’s Spice Journey”.
