Step 1 — Preparing the Pastry Dough
We start from scratch. Your teacher, Vanessa, will guide you through making a classic French short crust pastry (pâte sucrée) — the right texture, the right technique. You'll understand why each step matters, so you can replicate it at home with confidence.
Step 2 — Lining the Tart Shell
You'll learn how to line your tart tin properly — no shrinking, no cracking. This is one of the most underrated skills in French patisserie, and once you've got it, it changes everything.
Step 3 — Preparing the Filling
Here's where your chosen flavour comes to life. For the Chocolate & Praline tart, you'll make a hazelnut praline cream and a silky dark chocolate ganache using authentic imported French chocolate. For the Lemon Meringue tart, you'll prepare a classic French lemon cream and a glossy Italian meringue, torched to perfection.
Step 4 — Filling the Tart
With your shell baked and your filling ready, you'll bring it all together. Vanessa will show you how to layer, set, and build each component for the right texture and balance in every slice.
Step 5 — Decoration & Finishing
The final touch. You'll learn how to finish your tart the French way — clean, elegant, and beautiful. Because presentation is part of the craft.
Step 6 — Into the Box
Your finished tart is carefully packaged to take home. Ready to share ... or not. 🙂
